Can't be bothered to take photo's or right the recipe. Here's the thread for you.
Currently absolutely salivating over the smells of slow roast belly pork, roast potato, roast parsnip, roast butternut squash and gravy made from roast onion, garlic, cellery, carrots.
Another 30mins, then munch time..
So what you eating, photo's optional.
Might look like dogs dinner. But roast carrots, onions, parsnips, potato and butternut squash and yes mint sauce

Baked chicken thighs, with a garlic and butter sauce, covered with some crushed chillies. Wild & Long grain rice, with some peas and sauteed onions. For desert, yoghurt and fresh blueberries with cinnamon.
Tonight will be roast dinner :) My Mum's having a pork chop but as I'm intolerant to pork, I won't be having that.
Rest of the meal will be roast potatoes, carrots, broccoli, cauliflower cheese and plenty of yorkshire puddings and gravy :D
Just had honey and ginger glazed belly pork (left over from yesterday) with satay sauce, rice and carrots. yum.. Just hope I don't get hungry later as I ea so early.

I bought lightly smoked salmon by accident this time around.. it was lurrrvely!
Tonight we're having chilli bean bake with some chorizo bits in it. I think I've posted the recipe on here before so I won't bother again. It's an extremely cheap meal to make and very tasty.
Homemade 'honey chicken curry' with rice and a garlic & corriander tear'n'share flatbread :D

nice, I sky+ hestons in search of perfection the other day (the pizza one), will have to give it a go. Although I don't have a grill so can't cook it the same way.

Chocolate cream muffins (attempt #1)
Recipe (as requested ;) )
Makes 12 (or maybe more going by mine)
Oven to GM6
Sift 225g plain flour, 55g chocolate powder, 1tbsp baking powder and 1/8th tsp salt into bowl (I missed out the salt)
Stir in 115g soft light brown sugar and 150g chocolate chips (it says white but I could only find milk and dark)
Lightly beat 2 eggs with 250ml double cream and either 6tbsp sunflower oil or 85g melted and cooled butter (I did butter)
Gently stir wet into dry, don't over mix, spoon into tray/cases, bake for 20ish minutes until firm

I make my own naans at home using our tava :D really really cheap and so tasty- haven't had chance to experiment as far as a Keema naan just yet though! :D

started buying meat from my local butcher. That t-bone cost £5 it's thin so it was medium/well done. but it was still the tastiest/tenderiset steak I've had in over a year. Seeing as you would probably pay £3+ for a rump steak about that size it's great value. can't wait till the end of the moth and go get a steak a couple of inches thick.

Nice one on both accounts :). try and get a full 3 course meal out of them.
Tonight we had Spanish chicken pie - sorry no pics. We were too hungry :p
To make it, peel around 500g of potatoes and bring to the boil. Reduce to a simmer for around 10-15 mins. Meanwhile, soften a sliced onion & a crushed clove of garlic in a little oil, then add some smoked paprika and fry for a minute to coat. Add a can of chopped tomatoes and bring to a simmer. Add some cooked, shredded chicken, a handful of halved olives and some chopped roasted peppers (from a jar). Season and heap into a pie dish. When the potatoes are cooked, drain and mash them with some smoked paprika and a little olive oil. Spread over the top of the chicken mixture and top with cheese if you like. Put in the oven on GM7 for around 15 minutes until golden. Serve with whatever you like. We had some leftover cheesey garlic focaccia from last night.

Sour cream and onion Pringles.
Last night was sausages and mash. The sausages came from a butcher at the localish market and they were absolutely gorgeous! They didn't shrink one little bit in cooking so I will definitely be buying them again.
I did my version of Enchaladas last night........
Start my making some fajita's and then laying them in a deep over proof dish. (your normal fajita onions, peppers, marinated chicken, jalapeños, wrapped up in tortillas)
Get a saucepan and sweat off an onion and 4 cloves of garlic in some olive oil, pour in a tin of chopped tomatoes and a squeeze of puree, let it thicken and then add a good slug of Reggae Reggae Love Apple Sauce (this is the key!)
Pour a tub of sour cream over your fajitas in the dish, add some guacamole in dollops over the top and then pour your tomato sauce over the top, grate as much cheese as you like over the top of that and then bake on 180 for half an hour or until the cheese is melted and bubbling.
I cannot stress how lovely this is !
It makes a nice change to just having fajitas and tastes very authentic :)
I've just polished off 2 (smallish) homemade hot cross buns. Made them yesterday and Leon doesn't like them so I suppose I'll have to eat them myself.. NOM! :D
We have my parents coming over for tea, so I'm doing herby baked lamb in tomato sauce (it's like a greek roast lamb, cooked for hours until it falls apart) with oregano & lemon roasties and garlicky greens (mangetout, broc & asparagus). For pud I'm doing a raspberry & orange tiramisu.
AND I have a Green & Blacks dark choc egg to fit in at some point too FFS. Good job I went for a run this morning!!! :p

Although i used diced venison and slow stewed in the oven for 1hr30, can of chopped tomatoes instead. A lot more chilli(3 heaped teaspoons, of minded chiili)), a lot more paprika(2 tablespoons) and a touch of sugar. Make sure you fry the paprika and don't just add it in afterwards.

Today, so far.
Breakfast was porridge (technically gruel as it was made with water, not milk) with cinnamon and some cottage cheese (not together though), mid-morning - more cottage cheese and banana, lunch was fajitas, afternoon was ham style Quorn in wholemeal rolls, dinner was beef stew made with lean beef, chickpeas, chilli, paprika, treacle, beef stock, red wine, carrots, onions, peppers and tatties - with a side salad. Supper will be yoghurt with blackberries.

Tonight we had pasta with a ragu sauce that I made with the leftover lamb & sauce from Monday. Bloody gorgeous and we had enough for 4 helpings so that's 3 meals we've had out of the lamb :D
Last night I made fish cakes from Good Food Magazine. They were absolutely beautiful and I did an extra 2 portions to freeze. Served them with salad and cous cous, made with veg stock and a squeeze of lemon and then threw in a load of stuff I had knocking around in the fridge (feta, cucumber, sun dried tomatoes, olives etc.).
I have 2 rainbow trout in the freezer, so I think we'll be having those for tea with new potatoes & veg tomorrow :)
We've got something that hasn't got a name but is brilliant cheap, comfort food :D
We cut up a few oven cooked sausages, bung them in a frying pan along with a couple of chopped onions, half a tin of baked beans, some cheese, lea and perrins, tomato purée and some chilli powder, and well that's it basically :D
Having it with hash browns. Might not sound great written down but it really does taste nice and is really quick to do. :)
Dinner follows a similar theme to last night :D
Pasta, left over sausages, chopped tomatoes and onions.
Sounds good to me. Can't beat a random mishmash of whatever happens to be in the freezer :)
Our Rainbow Trout was lovely tonight. I kept the fish whole and slashed the skin 4-5 times on each side. Then I made a marinade of crushed garlic, chopped parsley, olive oil, lemon zest, salt & pepper and rubbed it into the slashes on the skin. I chopped up the lemon and put it in the cavity along with some sprigs of parsley. Then I grilled the fish for 4-5 minutes each side until they were sizzling and browned. Served with a nice big baked potato & steamed veg. Laaaaaaaaaarvely :D

Going to friends to cook for them tonight as they've had a rough week, so Chicken Korma seemed like a nice, simple thing to do :)
Slight variation this time round with cauliflower and mushrooms bunged in to bulk it up a bit.
Then having white chocolate mousse for dessert :)
Also just remembered, I meant to put the recipe up for the curry :o It is forthcoming, just been a bit of an odd week.

Tescos didn't have any aubergine :(. so having to leave it out a chorizo bake.
Chorizo, onion, chilli, red pepper, aubergine, tomatoes, cream, pasta with crisps and cheese on top. It's smelling so good, fried chorizo is just heavenly.
Found some kinda chicken stock in my freezer - no idea when I made it :D Defrosted it along with some chicken pieces and will see what happens :D
I haven't been on a picnic in years, must go for one sometime, have fun :)

It wasn't a picnic then :( Only had ready salted crisps. As well as broccoli quiche, caramel shortcake, 2 apples and a bunch of grapes. Not quite as impressive as it could have been but it was good :D
I've just made us bacon & brie baguettes.... mmmmmmmm!

Followed later by another can of Rockstar.

I made Swedish (Ikea style) meatballs tonight, complete with the gorgeous gravy. Served them with mash & steamed veg. Easy to make an an absolutely gorgeous, cheap meal. I'm glad I made enough for 4 now as there are two portions for us in the freezer :D

Kofta burgers - lamb burgers bought from the butcher. 65p each. Ruddy bargain and absolutely divine.
Chicken legs/thighs marinaded in lemon juice/zest, rosemary, garlic, olive oil & seasoning - MMMMMMMMMMMMMMMMM!!!!! Can't go wrong with a made-up garlicy lemony marinade IMO
Salsa comprising of avocado, red onion, tomato, lime juice, coriander leaves & a dash of tabasco. I also added some feta and olives simply because I love them

No idea what I'm going to have tonight, I was going to have bubble and squeak but I've been stuck in the office all day and won't be in the mood for cooking when I get home.

Joint of beef, slow cooked all day in beer stock, with potatoes and carrots, with Yorkshire Pud :) Was rather nice. The meat was melt in the mouth :)

I just had a Bolognaise made with ratatouille, due to a lack of regular toms. Surprisingly nice!

Yup! Now Phil goes out on Thursdays I can cook my own food without feeling guilty. I even left it's head on and everything. It tasted so good I forgot to feel sad. It's little life was worthwhile ;)

Thanks to a visit to chez Will last weekend I'm back making smoothies at home. I used to have them regularly but then the blender got put to the back of the cupboard and forgotten about.
Anyway, I've just had a rather nomtastic raspberry smoothie. It was going to be raspberry and blueberry but the blueberries I bought taste more sour than most lemons.
Ingredients - 1/2 punnet of raspberries, squeeze of runny honey (I like acacia best), large splash of orange juice, natural yoghurt, 1 medium banana, small handful of oats. Bung into the blender and blend. Change the consistency by changing the ratio of OJ:yoghurt.
We had our cheat meal last night....KFC ::/:

Last night, had beef brisket in red wine, roasted potatoes, steamed brocolli w/ red wine and rosemary gravy with the "goodness" from the bottom of the roasting dish mixed in. Was gorgeous but the washing up was immense.

Last night I prepared BBQ food but we had to have it indoors again because it got windy and cold :( Anyway, we had a couple of mates coming over and one is vegetarian so I made 'cheesy veggie burgers'. They have leeks, carrots, mushrooms, kidney beans, tomato puree, cheddar and breadcrumbs in them and were absolutely delicious. I made a big batch and froze some of them. Glad I did now as I'll definitely do them again for us :) Also made some olive bread which looked like chelsea buns. Was gorgeous and very impressive to look at :D

Just made steak diane, apparently the whole meal came in at under 350 calories which sounded suspiciously good. Twas quite nice, the sauce was delicious but we didn't really make enough of it.
I just made something using whatever was left in the fridge - fried some cubed ham in pesto, added some creme fraiche, and dolloped the lot into some spaghetti. Delicious!
Can't go wrong with a bit of creme fraiche when it comes to pasta. Veg + bacon/ham/meat + creme fraiche = Win. My favourite is chorizo + leeks + green beans + mushrooms + creme fraiche.
We're having chicken, chorizo and veg (courgette, red onion, peppers, mushrooms, garlic cloves etc.) thrown in a roasting tin and baked for 45mins or so. I do it quite a lot when I'm feeling lazy because it's so simple yet so tasty. We'll be finishing off our fancy olive bread swirls with it (I'll post a pic of them later).
Anyway, we had a couple of mates coming over and one is vegetarian so I made 'cheesy veggie burgers'. They have leeks, carrots, mushrooms, kidney beans, tomato puree, cheddar and breadcrumbs in them and were absolutely delicious. I made a big batch and froze some of them. Glad I did now as I'll definitely do them again for us :)

I can happily say we've tried most of the currys from our local takeaway and discovered some real gems. Some you are best not sharing long car journeys the following morning but tasted great the night before ;)

Having recently moved the Jingo household are undertaking the difficult (:p) task of trying all the new local restaurants/takeaways and have found some GEMS! :D
A tiny restaurant of about 6/7 tables has the most fantastic special hundy dishes I had never tried before- they aren't on the takeaway menu and when in the restaurant they ask how you like it i.e. breaktakingly hot, milder, rich, subtle etc etc....
A really fantastic experience - so much so I might have to become a regular face :D
Wish I could say the same 14/15 takeaways in Bristol are truly shocking.
We had salmon tonight. Put it in a foil parcel in the oven with lemon zest, crushed garlic, pepper, olive oil & chopped parsley. Served with warm new potatoes with a lemon & chive dressing and fine green beans. Lovely, light and summery :)

Chicken with red pesto on top, with salad and mini garlic jacket potatoes. Should be nice hopefully :)
Chorizo and mushroom omelette
great as a brunch or other large unhealthy meal
Ingredients:
4 large eggs
75g Mushrooms
50g Chorizo
50g Cheddar
1tsp crushed garlic
decent sprinkle parmesan
2tbsp cream
1tbsp water
1tbsp grated cheddar
100g rocket based salad leafs
1) Slice the mushrooms and dice the Chorizo and start frying in a little butter. Let the mushrooms shrink by loads and the Chorizo crisp up, then set aside for later

2) In a pan mix the cream, water and tablespoon of cheedar to gether and heat over a low heat until cheese and melted, avoid boiling though. Again set aside for later.

3) beat the 4 eggs together with salt and pepper.

4) in a heavy based frying pan melt a knob of butter over a medium heat and poor in the eggs.

5) lightly scramble the eggs, making sure you have enough liquid egg to fill the newly crated gaps.

6) spoon in the filling. As I'm folding it I'm only covering half, you can also do an open omelet and stick under the grill for a minute just to finish of.

7)Plate up with the leafs and drizzle some cheese sauce over the top and enjoy.

Just unwrapped the sandwich I got handed for lunch and it's spicy lambs liver in a baguette. Not something I would have thought to put in sandwich but it's jolly nice :D
Never got on with liver although I doubt I've had any good quality ones and properly cooked. Flavours silly intensive. Need to try it in a decent restraunt jus o check though.
Just chucked some mince, chorizo, can of chopped tomatoes, stock cube, chilli flakes and paprika together.
Need to go buy some pasta and crisps to turn it into a pasta bake.

Liver is fab - as long as it's cooked properly. If it's overcooked it's horrible and rubbery. I find lambs liver milder in flavour than ox liver. Never tried pigs liver - I must try that some time.
Is it better than Kidney? I've never been a fan of Kidney and always steered clear of liver.. apart from Pâté

I wouldn't say it was better than kidney but then, I liked kidney as a child but didn't like liver - I only started to appreciate liver when I was an adult.
It has a stronger flavour than kidney and a different texture. It seems to be one of those Marmite type foods - people either love it or hate it. I love it.
Liver's offal, and kidneys just take the piss.

Mmmm, that looks lovely! I love oily fish. Was going to do chorizo & chickpea bake tonight, but need to go to Morissons for some salad and think I'm going to do us salmon stuffed with anchovies & sun-dried tomatoes instead as I'm suddenly in the mood for salmon :)
Tonight I made a huge dish of chicken in white wine sauce and a casserole full of cabonnade of beef. None of it being eaten though! It's all been split into portions and put into freezer bags in preparation for once I am out of hospital and back home. I feel I won't be much up for cooking for a while after that and I want to have proper food and not rubbish or take aways.
One of my new favourite healthy meals is flaked smoked mackeral and brown rice with cherry tomatoes and avacado. Simplest thing I can make but delicious.

Mubs - don't blame you for making some food up for yourself. When we had our kitchen done, we knew we'd be without anything but a microwave for a few weeks, so I made up a load of chilli & spag bol and froze it. Much more satisfying (& better for you) than ready meals or takeaway. :)

Here's the recipe
Makes 2 man sized servings
Burger
500g lean steak mince
1/2red onion grated
1 tablespoon parsley (fresh)
1 tablespoon Thyme (fresh)
1 tablespoon paprika
1 tablespoon chilli powder
1 chilli finely diced
1 egg to bind
Then I had a little red onion and red cabbage salad on the bottom. All it is is thinly sliced red onion and cabbage left to marinade in some lemon juice for 30minutes or more.
Then 2 medium sized sweet potatoes with a little oil and Jamaican jerk seasoning. bunged in the oven.
If you trust the meat cook medium. This was cheapish supermarket so made it well done..
For anyone thinking about making their own burgers, avoid extra lean mince because they can be a bit dry. The little bit of fat in lean mince is quite important.
Tonight will be an easy one as I feel crappy:
Fusilli pasta bake - cheese sauce, bacon, broccoli - bunged in the oven for a bit with bits of crisps on top for a nice crunchy topping. :)
Hopefully make enough for lunch tomorrow too.

Calorie intake today was around 1450, I feel soooo bloody hungry!
Think I have nearly perfected Deep fried chilli beef.
Serves two
beef (chicken, pork anything really)
corn flour
warm water
2 large carrots
3 spring onion
1 red onion
2 teaspoons garlic
2 teaspoons ginger
4 teaspoons chilli paste
2 red chillis
tablespoon or so of Szechuan Peppercorns
1/2cup red wine or sake vinegar
1/3rd cup sugar
1/3rd cup light soy sauce
either deep fry or "shallow" fry in a decent amount of oil
either Julian or slither with a potatoes peeler the carrots. Then fry until coloured but not crispy. Idea is to suck the water out and concentrate the flavour without turning them into crisps/chips. remove and leave to one side on kitchen towel
Next slice the meat as thin and as you can. In a shallow dish mix some cornflour and warm water in to a sticky paste. remember corn flour turns to a "solid" when impacted. So mixing it is hard work, but just power through it. Use a pestle and mortar on the peppercorns and mix into the corn paste. Take the meat and mix in. Then remove and seprate the big clump. Fry the meat utill dark brown. Takes a surprisingly long time. remove and leave aside.
In a wok or large frying pan add a little oil and start frying the onion. One soft throw in teh garlic, ginger and chilli and fry a little longer. Next throw in the red wine vinegar, sugar, soy sauce. Thow on fll heat if not allready. As it starts to ruduce you can tell by he bubles. Thow in the sliced chilli and spring onion. Continue to reduces. Next once it is starting o thicken nicely. Throw the carrots and meat back in. And wait untill the sauce goes very thick and gooey coating everything.
Serve with egg noodles or what ever you fancy.
It sounds like a lot of chilli, however the vinegar and sugar really hide the chilli and I like this fiery hot. So a just to your liking.
Just eaten two mouthfuls of a massive curry that took me 3 hours to cook and I've over seasoned it to the point that it's inedible. I am VERY peed off right now and it's got a lot of expensive lamb in it.
I'll try and save it tomorrow by making more curry to let it down with.

Over salted. I blindly followed a recipe without considering that a stock cube is laden with salt, plus I'm using some French wet crystal salt that's a lot 'saltier' than table salt. I think I can save it now I've collected my temper.
Might you try adding some yoghurt to a small amount of the sauce to reduce the saltiness?

Now I have a bucket of the stuff! So have invited some friends round tonight to help demolish it!!

I wasn't going really going to cook anything special last night for Leon's bday because we're going for a meal tonight, but we went to Morissons in seach of fresh tuna and came back with mussels & steak instead (no tuna).
I made moules marinieres with crusty french bread, followed by steak, chips (wedges of desiree potatoes parboiled, then tossed with oil, s&p & chilli flakes and roasted in the oven) and salad with a balsamic dressing & shavings of parmesan. YUM!! No room for pud :D

Yeha just seen the next size down is graded at 8 to 12 prawns per kilo (that's around 6" long)
And the enormous ones is only 4-6 per kilo. :eek:. I so want to try these.
