On a temporary basis, Elisha Cuthbert :) Would be an excellent way to spend a couple of days.
Seriously though, probably someone like Matthew Bellamy or equivalent young rock God. I can't think of any finer experience than being an excellent guitar player in front of thousands of screaming fans.
Either that or Jenson Button/Lewis Hamilton. What a life!
I'd like to be Richard Feynman, bongo-playing physicist, because he's (was :() awesome.
Shallow answer: Whoever Daniel Craig is going out with at the moment, or more recently whoever Christian Bale's going out with too :p
More sensible answer: Probably a professional games journalist. :)
And in reality, admittedly despite not liking a lot of things about my life at the moment, I can't imagine being anyone other than me!

Just someone that is polite, cute, and has a fair amount of common sense.
It's amazing the amount of girls down here that are utterly utterly thick.. (sometimes in more ways then one ;D)
I just want to find someone 'normal' :(
It's quite bad but all the girls I normally start to like are about 6-10 years older then me :/ haha ;D
I'd have liked to have been George Martin back with the Beatles, that must have been exciting times.
Right now I'd like to be someone on the Giant Bomb team, those guys look like they're having an amazingly fun time :D
I honestly can't think of anyone I'd want to be. I'll have to have a think.

An interesting question!!
I suppose it would depend on whether I would "know" what was happening. If I could be anybody, in any time, but still retain my current thoughts and experiences (thus "knowing" that it was me in the place of that person) then I would be my younger self, back when I was 10 or so. I would get to live my life again, avoiding all the major mistakes and having an uncanny knack of picking the big winners and good share options to boot. My work ethics, dreams and ambitions would be focused and I would be considrably more mature and confident. Who knows how my life would be if I could change it at such a time.
If I didn't know who I was prior to being transported into another time/space/body, then it would have to be Jonny Depp. Not because of the chicks (although rattling the bones of Vanessa Paradis every night would hardly be a chore), I just think he's a great actor and a pretty decent bloke.
Do you get to keep your thoughts and your mind whilst at the same time knowing how to behave as the person you're being transported into?
If so:

I'd have a hard time being a woman as it may mean interaction with men in a way that I wouldn't want to ever experience. Though if it was guaranteed not to happen I can think of a few I'd like to lock myself up in a room for a couple of days ;)
Sebastien Loeb would be pretty cool, as would Casey Stoner.
Bah who am I kidding, if I woke up and looked like Brad Pitt I'd just walk around London flaunting it!!
however if I had no control and was just observing the life I was living - then I have no idea, maybe a stuntman's or someone on a film set or test rider for motogp or something like that.

I think at the moment I'd probably be Daniel Negreanu. One of the worlds best poker players who spends his days either playing poker (which I love) or playing golf (which I also love). Seems like a really nice guy who is down to earth and it would be interesting to live in his shoes for a little while.

Pin pointing one individual is impossible. But (unsurprisingly) it'd be somebody that I am/never would be, just to experience what it's like for him or her.
For example, Bruce Lee to feel what it's like to have an incredible ability in martial arts, Bill Gates' child to see what it's like to be born with the biggest diamond encrusted silver spoon possible etc.
