I've been meaning to make this for Kitten for some time so last weekend I finally organised myself and got it made. You can leave out the chocolate and just make a plain sponge or go crazy and include all sorts of stuff.
To make it you will need;
Sponge
3 eggs
1 tsp baking powder
3 tbs coco powder
200g butter
200g self-raising flour
200g caster sugar
Filling
1 small tub double cream
2-3 tbs caster sugar
Topping
100g dark chocolate
100g butter
100g icing sugar
Mix the butter and sugar until creamed then add the eggs, flour and continue until it's smooth. Add some water to the coco powder so it's smooth and not lumpy before you add it to the sponge mix. Divide your mix into 2 suitable tins (which you've coated with butter, used greaseproof paper, etc) and bake at gas mark 4 for 20-25 minutes. To check if it's done stick a knife in and if it comes out clean it's ready.
While the cake is cooking whisk the cream and sugar together for the filling until it's thick and fluffy.
Finally stick the topping ingredients into a bowl over simmering water and mix well until you get a nice chocolate sauce. You might need to sieve the icing sugar so your sauce isn't lumpy (thanks to lostkat for that)
Now comes the best bit, putting it all together. Base goes on the plate first, stick the cream in the middle, place the top part on and then pour the chocolate sauce over the top. Stick in the fridge to set the chocolate.
