Hello all! *waves*
I need your foodie wisdom!
I made a Butternut Squash and Chorizo risotto the other day (major yum), and now have a load of cooking chorizo left...
Anyone got any good recipes for it??

omlette with potatoes and rosemary - well more like a tortilla

chorizo and venison stew with mixed beans
Roast some veg and chorizo and serve in giant yorkshire
Just chucked some mince, chorizo, can of chopped tomatoes, stock cube, chilli flakes and paprika together.
Need to go buy some pasta and crisps to turn it into a pasta bake.
Chorizo and mushroom omelette
great as a brunch or other large unhealthy meal
Ingredients:
4 large eggs
75g Mushrooms
50g Chorizo
50g Cheddar
1tsp crushed garlic
decent sprinkle parmesan
2tbsp cream
1tbsp water
1tbsp grated cheddar
100g rocket based salad leafs
1) Slice the mushrooms and dice the Chorizo and start frying in a little butter. Let the mushrooms shrink by loads and the Chorizo crisp up, then set aside for later

2) In a pan mix the cream, water and tablespoon of cheedar to gether and heat over a low heat until cheese and melted, avoid boiling though. Again set aside for later.

3) beat the 4 eggs together with salt and pepper.

4) in a heavy based frying pan melt a knob of butter over a medium heat and poor in the eggs.

5) lightly scramble the eggs, making sure you have enough liquid egg to fill the newly crated gaps.

6) spoon in the filling. As I'm folding it I'm only covering half, you can also do an open omelet and stick under the grill for a minute just to finish of.

7)Plate up with the leafs and drizzle some cheese sauce over the top and enjoy.

Chorizo, onion, chilli, red pepper, aubergine, tomatoes, cream, pasta with crisps and cheese on top. It's smelling so good, fried chorizo is just heavenly.

Chorizo & chickpea casserole for us tonight with salad & a tomatoey bread thing I picked up on the way home.
This would work really well with chorizo and chilli
450g Pork mince
2 tbsp olive oil
1 onion chopped
2 garlic cloves chopped
1 bell pepper deseeded and chopped
250g potatoes peeled and chopped
2 tbsp ground paprika (I used the smoked variety)
1 tbsp ground cumin
3 large tomatoes chopped (or 1 tin of chopped tomatoes in rich sauce)
2 tbsp tomato puree
250ml vegetable or chicken stock
carton soured cream or creme fraiche (I realised I didn't have any so used some philadelphia thinned down with a little milk and added a few herbs)
Heat the oil in a large frying pan and cook the mince until coloured and crumbly. Add the onion, garlic, bell pepper and potato and cook for 5 minutes. Sprinkle in the paprika and cumin and cook for a further minute.
Stir in the tomatoes, puree and stock. Season then bring to a gentle simmer and leave, uncovered, to cook for 10-20 minutes or until much of the stock has been absorbed and the potatoes are cooked (depends on how big you cut your potatoes!).
Serve with a spoonful of soured cream over the top.
Sorry no pics of prep as I was late getting started and in a bit of a hurry! There is one of the final product though :)
