Just been making some of these for mum and dad's hamper.. it's so easy so I haven't bothered with step by step pictures but once finished I'll post a couple of pictures.
You will need:
8oz (225g) Icing sugar sieved
1 egg white
Few drops of peppermint essence
Few drops of green food colouring (optional)
3.5oz (100g) of chocolate of your choice (dark is best but works well with milk) (optional)
1# put the sieved icing sugar in a bowl and mix in the egg white to form a stiff paste.
2# add a few drops of peppermint essence and food colouring if using.
3# Kneed the mixture in the bowl to make sure all the icing sugar is mixed in. If it's too sticky add a little more icing sugar.
4# Put the dough on a work surface and roll it out to half a centimetre thick.
5# using a cutter of choice, last year I used a Christmas tree one, this year I've used a star, cut out the shapes and transfer to a baking tray lined with greaseproof paper.
4# pop them in the fridge to firm up.
you can stop here if you don't want to add the chocolate.
5# melt the chocolate and dip the creams in to half cover them, put them back on the greaseproof paper and return to the fridge to set.
