I actually liked this :p my friend made it last night and it was lush with Swedish Glace Vanilla soft ice cream (gluten & lactose free!)

Carrot Cake

Dry
100g grated carrot
75g plain wholemeal flour
100g soft dark brown sugar
½ teaspoon bicarbonate
¼ teaspoon baking powder
½ teaspoon mixed spice
½ teaspoon cinnamon

Wet
3floz oil
1 egg
Splash vanilla essence

Mix all dry ingredient. Then mix all wet ingredient. Then mix both together. Grease & line a tin. I used a large loaf tin, with double measures.

Cook in a preheated oven: 180/Gas Mark 4 for 1 ¼ hrs

I had it in a fan assisted oven for 50mins and took it out as it started to burn :/ will try 45mins next time.

Got no cream cheese for the frosting though :(

Sounds nommy and easy! Thanks Beebs, will try this soon! Might put a thin(ish) layer of vanilla cream on the top :D

carrot cake is awesome. Will have to give it a go.

I made this one the other week. it was so incredibly moist and yummy. Although haven't perfected cream cheese icing yet. I have this inability to create any icing. I have no idea why.

That's what I thought. But after some googlage some people say yes and other 'a bit'.

I think there will be enough oil in this to suffice though - just make sure its cooled totally before turning out I think.

Yeah I put a bit of oil round the inside before sticking it in.

New oven though - fan assisted bloody burnt it!

Trying to disguise with frosting tonight, if Loz give us her recipe ;)

Did you use yellow colouring instead of vanilla extract???

lol seriously did you use unrefined icing sugar? if so it will look yellowish...

I used Silver spoon :D
