View Full Version : Cheesecake Brownies

I found this recipe via the rather nice iPhiladelphia app on the iPhone but thought I'd type it out for anyone interested :)

125g margarine
125g dark chocolate
200g brown sugar
3 eggs, lightly beaten
50g plain flour
50g cocoa powder
0.25tsp baking powder
200g Philadelphia Light
50g caster sugar

Combine margarine, chocolate and brown sugar in a medium saucepan and stir over medium heat until chocolate and margarine have melted. Remove from heat and whisk in eggs.

Add flour, cocoa and baking powder and stir until well combined. Pour into a greased and lined 18cm x28cm rectangular tin.

Beat Philly and caster sugar until smooth and creamy. Spoon randomly over chocolate mixture and swirl with the tip of a knife.

Bake at 180c, 350F, Gas Mark 4 for 35-40mins or until cooked through. Allow to cool before slicing.

In my case I used self raising flour instead of plain flour and baking powder, and drinking chocolate powder instead of cocoa powder but it was still absolutely delicious :D Ooh and I bunged in some vanilla sugar as well as regular sugar.

I only used half the cheese mixture as I was worried it'd overwhelm the flavour too much, but in the end it soaked into the mixture so there's not as much cheesecake as there should have been :o I know for next time at least :D

Oh and if you have a fan assisted oven, DON'T cook it at 180c for 35-40mins. I set mine for 30mins starting with a cold oven, and it was still a bit overdone on top for my liking although lovely and gooey on the inside :D Next time I think I'll reduce it further to 25mins.

No pictures of afterwards as it's being gradually decimated :p

Isn't that just a cheesecake though? :p
Rather than this is brownies with hints of cheesecake on top ;) And home made by very amateur cook me, thus instantly better :D

no, it's brownie on top with cheesecake base.I did read the recipe before posting, it's virtually the same but reversed.

This one is a brownie with cheesecake drizzled on top basically :) No cheesecake base in sight!

Probably just me being over-sensitive, happens every 5 minutes or so ;)

They are :D That app's really rather handy, few good things there I'd like to try at some point. Always seem to have cream cheese in the house.

Nope she's not. It's a recipe book for Philly, just an iPhone version of the more expensive (ie not free) hardback version. It's excellent.

Oh and there's no more brownie left :( Rather tempted to cook more but best leave it a few more days I think ;D Too damn moreish!

Brownies look awesome and downloaded the Iphilly app. It actually looks really good. There is a lot of recipes that use creamed cheese.

lots of diety type stuff that you wouldn't expect too, because a spoonfull of cream cheese with garlic added to a sauce base is relatively low fat for the result you get compared to a stir in sauce of the same consistency which is usually much higher in fat.

Yeah trying something like that tonight. Some extra light philly to make a barley risotto creamier with a pollock fillet ontop.

Also got myself some smoked haddock and really have no idea what to do with it. I'm not a big fish eater but trying to eat more and lower my horrendous food bills.
