Blinis, smoked salmon, horseradish crème fraiche

Stuffed courgettes, ricotta, pine nuts, fresh basil and lemon juice, drizzled with balsamic vinegar.

Apart from the main courses and the desert on the black plate the rest was plated up in front of 20 guests, all the prep done in advance.

It was good fun making these in front of everyone...

School, 2 litre Coke bottle, 1/4 fill with warm water, handful of dry ice, screw on lid tight, run away fast...
