Probably no one else is bothered but I'm proud :p

Since getting back to Stafford just over a week ago I decided that I was going to empty my cupboards of most things until I reached a point where I couldn't form a meal out of it. Now as a not at all experienced cook, this seemed rather scary at first! But I needed to save the money and figured it'd be a good learning experience I figured I'd give it a try.
Only rule I've set myself is I can buy fresh stuff (so I have bread and eggs and milk).

After a few unexciting things with pasta, I was bored of pasta. So I had a look in the cupboards and found a tin of new potatoes, a tin of carrots,a jar of curry sauce, some frozen brocolli and 2 potato waffles in the freezer.

Figured as I've got no meat in the house (besides some wafer thin chicken stuff I have in sandwiches) I'd make a veggie curry.

So 20mins later......ta da :D

I know it's nothing fancy really but I feel proud that I came up with it and it worked. :) Even better it tastes delicious and I made enough so that I've got some for tomorrow too :D And it was dirt cheap too thanks to the veg being all Asda smart value.

Also as a side note of 'yay'. That means I've had 5 portions of veg today which is a record for me as I'm usually crap with veg. I had lots of cucumber and lettuce in my sandwich for lunch earlier, as well as had breakfast.

So erm, yeah :D

;D Might have been a bit messy :p

I'm quite surprised how pleased I am, just this feeling alone will encourage me to make another conconction :D
And I am pleased I got to my daily portion of veg, funny thing is I like most veg, just never seem to know what to do with it to make it really interesting.

This meal will definitely be a regular weekly thing I think :) Been trying to eat more healthily as it is.

LOL Dawn :p

Wooo! Well done bubs! I love making up random gumph and your veggie curry look lubberly!

I mooed up my chicken quorn tonight - it started to dry out so I added some water... which was too much... so I added gravey garnules! Not quite what I was hoping for but it tasted nice all the same!

Keep it up :)

I've also forgotten how filling so much veg is, I'm soooooooooooo full.
Not used to being this full.

I think I am going to head up to the cess pit and cook myself some food. You might have inspired me to do something!

That comment may have been deliberately worded in an ambigious manner ;)

Baaaah veg is easy to cook, either fry it up in a curry or pasta sauce, or boil it and have it with meat and chips. Or eat salad, easy really. Saying that I do not eat nearly enough veg at uni. :(

That's fine once, it just gets boring after the first day :undecided:
Then again that's why i'm trying to figure out more things to do with it because I get bored easily with the same thing all the time.
So I'm getting there :)

I'm digging through all my mental recipes (in more ways than one in some cases) for interesting ones for Jen. Fun!

Have you tried stuff like stuffed peppers/aubergine with rice and mince or cous cous, or grilled/chargrilled courgette/salad peppers.

They are always pretty tasty and easyish to do. A pack of value peppers some rice and seasoning isnt expensive either!

I'm not that keen on peppers really, don't mind the odd slice in something but not a whole pepper :) Same with courgettes.
Main things I like are brocolli and carrots, but I think as with the majority of food it's just a matter of eating them a reasonable amount but not so much that I get bored.
Short attention span in life must spread to food as well ;D

Brocolli and cabbage pan fried in butter with crushed garlic.

Very quick and very yummy as a side dish for something meaty.

Wow! That was *seriously* tasty!

Went up and had a look at what I had in. Amongst all the usuals like soup and beans I found I had a tin of beansprouts, a pack of straight to wok noodles, some hoi sin sauce and a steak in the freezer. Bingo!

Woked it right and good (like you know you should) with the beansprouts and noodles while superheating a pan to flash the steak which I had cut into strips. Took longer to cook the beansprouts than the steak :D

Dash or two of soy into the wok, jar of hoi sin over the steak, combine the lot on a plate and job's a goodun.

Chronic lack of colour so visually disappointing but nevertheless was absolutely delicious! Beansprouts crunchy, noodles tender but not sloppy, steak melt-in-the-mouth tender and for a jarred sauce, the hoi sin was spot on :)

Result!

oooo I'm not the only one to make concoctions then :p

Tonight i had pasta, with a tin of sweetcorn and some chopped bacon all mixed in, was gorgeous!

My special concocotion is sliced chicken and bacon, in pasta, with a huge dollup of ketchup! The vinegar in the ketchup give it quite a nice taste, when there isnt too much of it

I don't really know any recipes, I just improvise and "throw stuff" together. It's the most fun way IMO. Though of course it would be nice to know some "official" recipes.

That looks like a good effort Jen. :)
