It's pancake day apparently, here's how to make pancake batter for about 5-6 pancakes :)
100g plain flour
1 egg
just under half a pint of milk
Bung the flour and egg in a blender and top the contents up to about 1/2 pint mark. Blitz it up so all the flour is off the sides. Add more milk if it's not runny enough or a bit more flour if it's too runny. Some people like to add a second egg but I find it a bit eggy tasting then. You can use it immediately but leave it for half an hour and top with a little more milk and you'll get smoother pancakes
For english style pancakes the batter need the consistency of thick single cream.
Get a non stick frying pan very hot (do yourself a favour) and melt a small knob of butter. Quickly add a ladel of batter and cover the bottom of the pan. Let it cook over a reasonably high heat until it is dry across the top and the edges have started to lift. It will now shake free from the bottom of the pan and you can toss it over. The first one never cooks as well as the others
Serve with lemon juice and white sugar, maple syrup, chocolate sauce etc.
For American pancakes I use self raising flour and have the batter like extra thick double cream, you use more flour until it's thicker. As you ladle it into the pan it holds its shape and puffs up with bubbles, then you turn it over when the edges have gone dry.

I don't weight it out, just get it to the right consistency, almost the same way as making yorkshire puddings expect I add some olive oil to that. Going to make some tonight if I get a chance.
Blender? WTF? Are you mad.. the secret to great pancakes is not to over whisk them. Shoving them in a blender isn't great. use a fork and slowly add in the milk, not shove it all in in one go.

I like Jezsoup's idea over on OcUK: bung it all in a bottle, shake like hell, pour into pan, bung in bin when empty, no washing up. Legendary.

I Love pancakes but i love lemon juice more. Lemon juice on pancakes and my Salads or i don't eat it/them.

Just made some for me and the kids, they were lovely :) I'll make some for Cliff when he gets in too.
I'm hoping Nana has got loads left for me when I go and pick Janet and the kids up.

We've just had 2 each - I had lemon & sugar and he had chocolate sauce :D
We had a couple. I whisk mine gradually addidnt the milk by hand and it takes SO much less effort and washing up than doing it in a blender, especially for such a small quantitiy. I don't leave it to rest either, but add 1tbs of melted butter and that gets it to a really nice consistency.
I've been chief pancake maker for as long as I can remember. Made them for the family at home, for my Uni mates whilst I was at Uni and now for us in our house. Leon had 3 and I had 2 1/2 all with sugar and lemon. I also love them with maple syrup, but sugar and lemon ROCKS!!! :)

arrrgh! id be looking forward to pancake day all month...and then i only remember today! I need a belated pancake day with lots of extra pancakes!

Didn't have pancakes.. The kids had already had there's by the time I got home and i'm on a bit of a diet so I was a good lad :)

Instead of pancakes I met up with a couple of mates for a quick drink... then once I got in at 2.30am from the Jazz club it was a little late to start cooking ;D Oops!

I didn't get any myself after all this fun. Girlfriend has headed home to grieve lost grandpa and I couldn't be bothered to make them for myself. We'll have a belated Pancake Day next week.

I get a pancake in the end although it was canadian style and she made me eat it before my dinner - apparently the main difference is as well as maple syrup on top it has sugar in the batter! :shocked: Wasn't too bad to be honest, although I would highly recommend having after or instead of savoury food... not before! :(
