Does exactly what it says on the tin. Yummity Yum and VERY hard to mess up! It's not very imaginative, but it hits the spot and me/him both love it. Sorry no photos, it needs to be eaten right away ;)
Serves 2
Ingredients
150g Pasta shapes
1-2 tbsp olive oil
125g prosciutto or bacon, roughly cubed (I used a big piece of smoked bacon that Leon bought on the German market in Chester)
1 leek, finely sliced
125g mushrooms (I used chesnut mushrooms)
3-4tbsp creme fraiche
salt & pepper to taste
Chopped fresh parsley
Recipe
Put the pasta on to boil for 8-10 mins.
Heat the olive oil in a pan and fry the prosciutto pieces until they are golden. Add the leeks and mushrooms and fry for about 5 mins until the leeks are tender. Add the drained pasta to the pan and stir everything together. Next, add the creme fraiche, season with salt and pepper and stir everything together.
Dish out into bowls and artistically sprinkle the chopped parsley over the top.
Serve with some freshly grated parmesan and nice bread.

N.B. You can vary the veg if you like - It doesn't have to be leeks & mushrooms.. anything will do really. Mini sweetcorn, mange tout etc.
