This is a Gordon Ramsay one, only I substituted olives for anchovies because... well... they rock! It's suddenly rocketed to one of Leon's all time favourite dishes, and I must admit that I'd happily eat it on a daily basis too. And this is coming from someone who used to think salmon was boring :)
Serves 2
Ingredients
2 salmon fillets, with or without skin
1 clove of garlic, sliced finely
Fresh basil leaves
12 sun dried tomatoes
1 small tin of anchovies in olive oil
Recipe
1. Preheat oven to Gas Mark 6 (200ish degrees?)
2. Take an apple corer and make 6 holes in each of the salmon fillets. Make sure you don't actually remove any flesh, just twirl the corer around so there's a hole. If your fish still has skin on, make the holes from the skin side.

3. Take a sun dried tomato (cut in half if it's a biggie), lay a basil leaf on it, followed by half an anchovy fillet and a slice of garlic. Roll up into a tube, and push into one of the holes in the salmon fillets. Repeat until you've filled all the holes (arf arf)

4. Place in on a baking tray and drizzle with the oil from the tinned anchovies.
5. Bake in the oven uncovered for about 10 minutes.
6. Serve with whatever you like. I made a tomato salad with mine and did a few new potatoes, which had the oil from the fish pan poured all over them.. waste not want not :p

It is SERIOUSLY nice! The sundried toms look like they're burnt, but they're not. It's just a poo camera phone :D
