View Full Version : Sausage & Vegetable Casserole type thingy..

I didn't take any prep pictures as I just chucked this together today and didn't know how it would turn out !

Ingredients ( makes enough for a small army )

12 x cumberland sausages
1x hooge onion
Garlic ( I think I used about 4 cloves )
Mixed herbs
Worcershireshireshire sauce
1x green pepper
1x large carrot
1x large courgette
1x leek
2x celery
2x tins of chopped toms
2 pints of stock ( 2x veg oxo & 2 x beef oxo )
Large splash of red wine
Cornflour
S&P to taste


Method :

Shallow fry the sausages until slightly browned, put to one side to cool off.

Brown the onions in a little olive oil with the garlic, mixed herbs and worcs sauce.

Once the onions are soft add the chopped toms, stock & red wine - mix thoroughly.

Add the sausages ( chopped into thirds )

Add the rest of the chopped veg, cover and either simmer for about an hour or place in a slow cooker for about 3/4 hours.

When it has about 30 mins to go add some cornflour to thicken.

We served with mashed pots and mange tout.

Got tons left over for dinners tomorrow and the rest is going in the freezer :D

Nice. I always chuck in a few tins of beans as well. Mmmm farty.

Edit: though I could you not needing the encouragement of beans in your household :D

You don't need it BBx. Just add some water with a dash of soy sauce or something. The spag bol I make is supposed to have red wine in it, but I'm not bloody opening a bottle of wine just for that so I substitute it with water with a few drops of worcs sauce and soy sauce. Works fine :)

Does anyone know if one could pour red wine into ice cubes for such a purpose?

Would be more convenient if one could freeze wine cubes :cool:!

piggy is that 3/4 of an hour or 3-4 hours?

3 to 4 hours in the slow cooker or about an hour in the oven

We're having this tonight again as I made a shedload and put some in the freezer :D

I think the wine really adds to the taste but I just have a bottle of red with a stopper in it for cooking.

How long do you find it lasts piggy? I always worry that it'll go off after a couple of days.

It has lasted for lunch the next day and I've chucked the rest in the freezer ! :)

I've got a bottle with a stopper in it which has been opened for about 3 months now, it would taste awful for drinking but fine for cooking :)

We actually almost had two different meals - Matt's serving was lots of sausage bits, a few veg and some sauce, mine was lots of veg and sauce with a few sausage bits! Both were yumtastic though :)

I'm down at my parents this weekend, and I offered to cook them (and Kari) something for this evening, in part to save mum hassle cooking one handed (she's broken her left wrist)

Made with veggie sausages because of Kari... forgot the carrots though:o Kari got under my fe... I mean, helped out with the cooking doing useful stuff like chopping some (Kari claims "most") of the veg and stirring the casserole in the pan whilst I faffed about trying desperately to remember what order I was supposed to be doing things in :)

Served with a nice bottle of red, followed up with some ice cream on meringue nests.
