Not long to go.
I've never cooked a pancake from scratch, usually get the pre made ones cos I'm scared.
So, tips on making pancakes and also filling tips... I'm very traditional so will have a few with lemon and sugar, then some ice cream and syrup mmmmmm.

100g flour
250ml milk
1 egg.
Mix it all up and stick it in the fridge covered during the day. When you're ready to cook give it a good mix up again and add a little oil to a pan. When the oil is hot ladel some mixture in and swirl around so the bottom is covered. Cook for around errr a minute or so then flip. :D
I've gotta try this. It'll be a mess, a complete mess but I shall attempt pankakke.

You could always try drop scones or "scotch pancakes" as they are sometimes called, a little less scary than large crepe style and awesomely tasty with jam/butter/lemon curd...
For the drop pancakes
110g/4oz self-raising flour
1 egg
pinch baking powder
290ml/10fl oz milk
30g/1oz caster sugar
Method
1. Whisk the self-raising flour, eggs, baking powder, milk and caster sugar together in a large mixing bowl until its not lumpy
2. Heat a frying pan with a little bit of butter or oil
3. Spoon dolups of batter onto the pan, to make separate pancakes. Cook until you can see air bubbles appearing then turn over and give them about the same time. (you can always keep turning them until your desired browness is achieved)

If you don't have an electric whisk (or even if you do), I've found the best way to make a lump-free batter is to add all the dry ingredients to a bowl. Crack in the eggs and whisk to a thick paste. Then add the milk a little at a time, whisking until it's thoroughly incorporated. If you can't be arsed to make it hours in advance, add a couple of tbsp of melted butter to the batter to thicken up the mixture prior to cookage.
Also, make sure you get the pan really hot before you add the batter and don't be worried if your first pancake looks like a pile of sick. It's the practice one ;)
I use Delia's recipe for pancakes, but they're all pretty much the same.

Sweet pancakes are nice, but savoury pancakes are also veeeery good.
Try making up a thick bolognese sauce and putting it inside a rolled up pancake with a little cheese sprinkled on top. Heavenly!
For crepe style pancakes (makes enough for 2 people)
2oz plain flour
pinch of salt
1 egg
3.5fl oz milk mixed with 1.5fl oz water
1oz butter
Put flour and salt into bowl. Make a well and break in egg. Stir in the flour from the sides and make a paste (do this gradually with a fork and beat when all the flour is in and you won't have any lumps). Then slowly whisk in the milk & water.
Melt the butter in the pan and take a couple of teaspoons of it and put it into the batter and stir it in. Pour all the excess butter into a bowl so the bottom of the pan is just coated with butter. Ladel the batter into the pan and swirl it so the bottom of the pan is coated. When just turning golden on the underside flip it over. When cooked transfer to a plate with a tea towl on it and fold the tea towel over so the pancake is kept nice and warm. Add a little more butter to the pan with kitchen paper and make the next pancake. Repeat.

Pancakes consumed. Lovely jubbley. I always wonder why I don't do them more often when I cook them. I bloody love pancakes :D
We had boggo normal pancakes with sugar and jif lemon, I hassled Mrs. Feek by text throughout the day to make the batter early and she did it mid afternoon. The pancakes were cooked and consumed around half eight tonight and they were the best she's ever made. I love 'em and I said that we should have them more often.
Right, well ... I give you drop scones ala Pete. In other words, drop spludge. They didn't quite hold their own and I apparently made pancakes. Never mind, they were great and I haz leftovers for tomorrow :D I haven't properly cooked anything in years. I love to do it, just I suck at food. So I'm going to try more :D

Yeah :D Didn't quite work, but I actually made something that tasted really nice. I shall make more tomorrow :D
I got some Hotel Chocolat Strawberry chocolate stuff out of the cupboard and grated it over my pancake :D

Pancakes rock.
I made mine using flower, a pinch of salt, some milk, 2 whole eggs, and 1 yolk, a touch of nutmeg. I have no idea on the quantities as I just do it by eye. I leave the batter to stand for a couple of hours too. I always use butter in the pan mmmmmm - it's naughty but so so much nicer.
I like them just with sugar, sometimes I put some lemon on them. If I'm feeling very naughty I use Nutella. :o

I had mine last night with syrup and crispy smoked streaky bacon. Yum.

Damn it. Completely forgot about it. :o Gutted as I love pancakes.
Belated Pancake Day on Saturday is in order I think. :)
Had a late pancake day yesterday night. Thought I'd try something different and poured some melted butter in the batter like I'd heard. It didn't work :/ and I lost a large number of my pancakes but we got 7 out of it. Sliced up some strawberries and caramelised them in a bit of icing sugar and a splash of balsamic vinegar then rolled them up with a bit of lightly beaten double cream. Lally it was.

My mate was pouring melted margerine into our batter, although to be fair the turned out fine. I did wonder where he got the idea, but i guess he was googleing beforehand...
