Feeds 6, I halved it and it did for 2 hungry people

80g Fresh Coriander
1 Pack of fresh Lemon grass (2 stalks)
2 Red Chillies halved and deseeded
1Kg of meatballs (I used 12 Aberdeen Angus from Waitrose)
2 tbsp Groundnut oil
3 tbsp Thai red curry paste
400ml of coconut milk
1 tbsp tomato puree

First chop up the lemon grass (strip off the out tougher leaves), chillies and fresh coriander.

If Waitrose does not have fresh coriander, this is the face you make

Then you resort to dried coriander, oh the shame :o

Roll the meatballs in the chopped stuff

and transfer to a hot wok with the ground nut oil on a medium heat

Pause for a snack and chop some chillies for garnish whilst the meatballs cook and bung the oven on to 180C

Transfer the meatballs to an oven proof dish and bung them in the oven to finish off, then clan your wok out with some kitchen towel

Next up bung the red curry paste and coconut milk in the wok

reduce and add tomato paste

Prepare beer

Chuck some egg noddles in a clean wok or microwave

and the magic is complete!

Those look really interesting, very different take on a classic and as i lub noodles and all that sit on plates with them i will endeavour to make them when i think mum will agree to buying such posh ingredients as ground nut oil. :)

Paula, ground nut oil is about 49p for a medium bottle. It's cheaper than olive oil :p

They look really lovely Matt. Probably a bit hot for me, so I'd add slightly less chilli certainly the first time I made them anyway. Incidentally, do you know the diff between green and red thai curry paste.. apart from the colour? :)

That does look good. This forum is tempting me to break out the wok and get cracking :D

Just out of curiosity, could you update with rough times? I'm really a cooking n00b, bar general meat cooking and I never have time during the week.
