Tried this today and it's SOOO simple and lovely. I served it with a very simple rocket/watercress/spinach salad, balsamic vinegar and olive oil vinigarette... and shavings of parmesan. You could do it with new potatoes or anything really though.
Mediterranean fish
Serves 2

Ingredients
- 2 fillets of white fish (I used haddock and cut my fillets in half so I could get the tomatoes/olives in around them)
- About 10 cherry tomatoes halved. (Spend a little extra and buy the ones that come on the vine. They are SO much nicer.)
- About 20 black olives, stoned and halved.
- A couple of tbsp of pine nuts
- Olive oil
- Basil leaves

Cooking Instructions

Preheat the oven to Gas Mark 6, take a big baking tray and heat up a slosh of olive oil
When the oil is hot, put in the fish skin side down and cook for 2-3 mins until the skin is crispy. Try not to fiddle with it and move it about.

Tip the tomatoes, pine nuts and olive into the tray, season and pop in the oven.

Bake for around 15 mins until the fish is white and flakey.
Sprinkle over the basil leaves, drizzle with a little olive oil and serve.
