I just thought I would:
a) Ask if anyone has a good recipe
and
b) Warn people NOT to use Nigella Lawsons recipe (http://www.nigella.com/recipes/recipe.asp?article=1234) unless you wish to produce white chocolate turds in a muffin case.

I keep thinking of trying to cook cakes or something but in the past they always look really bad - I will try one day :)

I have used that very recipe from Nigella (its from her Feast Book)
and it worked a treat!
I have a few great ones at home, will put them up this evening
Sponge cake recipe works well to be honest and make cupcakes.
Pheebs, did you stir the mixture thoroughly? To make the perfect muffin, there should be as MUCH air in the mix as possible. You should mix it until literally only just combined. It will look lumpy and crap, but trust me it makes them rise beautifully.
I use Delia's recipe.... it's this one only with the pecans/blueberries removed and lots of chocolate chips added http://www.deliaonline.com/recipes/blueberry-and-pecan-american-muffins,1274,RC.html :D

Yup... I followed the recipe religiously and really ensured it was airy and everything (though when I tasted the cold mixture it wasn't half horrible... not like normal cake mixture)... and they turned out awful!
(I say this and Picky is working his way through them - he seems to like them - despite the fact he has to eat them with a spoon as they're all weird shaped! I managed to pick the chocolate off the top of one... and that was about it!)
I am really REALLY quite bad at making desserts (other than about 4 I made up and couldn't really tell you the recipe... I just plonk things together, taste them, add missing bits, chuck in oven). When I was with the Marines as a civvy chef they stuck me on desserts and pastries for a whole week (I think they just wanted to see me do lots of whisking action... if you've witnessed my whisking you'll understand why). I was pants. They soon learned their errors and plonked me back to making wicked curries and nom-tastic high carb fud!
I don't know why... even simple things like flap jacks! I've followed recipes word by word and they will come out gooey/burnt/weird tasting etc. The last batch I decided to do went so crispy (though not burnt mind you) that Picky used them as breakfast cereal :(
I just want a recipe that's easy and workable :( I can make cake and sponge... so may just do the same mixture and make cup cakes.
But.
I want to make new things! And cakey moist and nommy things too! Not jellys and poofy things like that! My boy needs hard core yurmmy fattening fud!

Haha! Pickers seems to get all the failed experiments that one would normally feed to the family dog... whilst Trio tucks into a nice Shepherd's pie or some roast beef. :D
He has the choice not to! But he's a nom monster! He just eats anything... even if it is bordering on being inedible!

I'm making choc chip muffins tomorrow and these always come out lovely.
200g plain flour
50g cocoa powder (I go by what it looks like rather than measure)
1-2 tablespoons baking powder
pinch salt
115gm caster sugar
75g choc chips
2 eggs
100ml veg or sunflower oil
225ml milk
vanilla essence to your taste
Sift the flour, baking power, cocoa powder and salt in a bowl and stir
Add sugar and choc chips and stir
Make a well in the centre
In another bowl beat eggs with oil until foamy
Beat in the milk and vanilla essence
Pour the mixture into the well of dried ingredients and stir until just combined, it should still be lumpy
Fill cases 3/4 full and bake for 20-25 mins at 190 fan oven.
For cherry muffins substitute the cocoa for plain flour and use cherries cut in half instead of the choc chips.
does the mixture taste nice raw? Because miss nigellas tasted 'orrible!
Will have to try this again. I may employ someone to help me though to make sure I am not doing it wrong. :)

The ones I make do taste nice raw, kids always lick the bowl ;D Going to make mine after lunch, think I'll make both sorts :)

i'm going to be having a go at muffins this afternoon
using the delia recipe, purely because i don't fancy using vegetable oil
making 6 lemon, and 6 choc chip - we'll see how they turn out!
results! rose FANTASTICALLY, but just choc-chip in plain 'batter' is a bit tasteless, i think next time i'll add some vanilla seeds or maybe some orange zest to liven it up. lemon is lovely, but maybe a bit dry. i might do some drizzling (lemon-drizzle-cake-esque) to see if that improves them.

I just thought I'd let everyone know I have just nommed a Blueberry Muffin and washed it down with a cup of tea and it was STUPENDOUS!!!
I need a good full proof, tried and tested, picture of the making and end product recipe that works to make these NOMTASTIC little bundles of fluffy joy that melt in my mouth :) Anyone up for the challenge?!?!
Pickys Sister tried to make some and they've turned out non sweet and look a bit like scones! Boo! We NEED a muffintastic nomtiscious recipe!

Banana cakes are my favourite. These look amazing.
they don't taste too bad either :)
They do look fantastic. Not a fan of bananas, but I am a fan of cakes so they win :D
