View Full Version : Poached chicken marsala with rosti

I took some chicken thighs out of the freezer last night for tonight's tea but wanted to do something different with them. Rather than look for recipes, I made up my own :D

Step 1.
Crush some garlic and strip some fresh thyme into some olive oil - add seasoning.

Step 2.
Smear it on the chicken thighs (under the skin as well as over it) and leave to marinade for an hour or so.

Step 3.
Poach for 20-25 mins in liquid comprising of chicken stock (I used shop bought stuff), a good slug of marsala, some carrots, some onions and some more thyme.

Step 4.
Grate some potato and squeeze out as much liquid as possible using a dish cloth.

Step 5.
Fry Rosti.

Step 6.
Pour away some of the poaching liquid and reduce the remainder to taste. Add a dollop of creme fraiche.

Step 7.
Serve with some veg and enjoy.

Surprisingly tasty, considering I didn't have any sort of recipe and it all came from my head.
One mistake I did make was, I forgot to add salt to my grated tatties and leave for a bit to drive out some of the liquid before I squeezed them so my rosti was a little soggy. Apart from that, I'd have it again.
