View Full Version : All American, rootin' tootin', yippie aye oh Choc Chip Cookies

Found this somewhere online whilst searching for a recipe for the soft American cookies like the ones Millies sell. Most of them wanted strange American ingredients, but this one looked perfect so I gave it a go... Bingo!! They turn out all soft and lovely. Just like mama used to make 'em :D

Makes about 25-30

Ingredients
100g rolled oats or oatmeal
125g plain flour
1/2 tsp baking powder
1/2 tsp bicarbonate of soda
1/2 tsp salt
50g bar milk chocolate, grated (or just break up in the food processor)
100g butter at room temp
100g soft dark brown sugar
100g caster sugar
1 large egg
1/2 tsp vanilla essence
115g choc chips

1. Preheat oven to Gas Mark 5
2. Whiz up the oats in a food processor to break up into a fine(ish) powder, then add the flour, baking powder, bicarb of soda, salt and grated chocolate and whiz again to combine.
3. Pour the dry ingredients into a bowl, then cream together the butter and sugars in the processor.
4. Beat the vanilla essence and egg in a cup, then beat into the sugar/butter mixture.
5. Add the dry ingredients and choc chips and mix thoroughly.
6. Roll into balls the size of ping pong balls and place 2" apart on a greased baking tray (don't flatten them).
7. Bake for 10 mins. They should be golden in colour but still look a little underdone - this is what gives them their lovely chewy soft texture.

Enjoy whilst still warm with a glass of milk, YUM!!!

They really don't look like much, but they are soooooo yummy. The mixture is most excellent too, so make sure you thoroughly lick the bowl out.

I added 2 tbsp of cocoa powder to this batch and took out the vanilla essence. I also ran out of chocolate chips, so I just chopped up 100g of dark chocolate bar that I had left over from making a chocolate cake.

Yes they do Feek. They also sink when you take them out of the oven.

you could substitute them with cherries or raisins, they'd be just as yummy :)

Thats a good idea, just have to wait until Richard is around to help me make them.

Made em, and theyre nomalicious!

I have to add a tip to anyone else making them for the first time.
Dont open the oven after 10 minutes (or whenever you remember :p), look at them on the tray, give them a poke, and see them all liquidy / wobbly like, and go 'oooh they need more time' THEY DON'T! lol

Take them out and they will set.
Leave them in and the baking powder starts to work and you end up with aeriated cookies which lose theyre chewyliciousness.

I made two batches tonight
One with white chocolate chunks, and another with fruit and nut toblerone....and aero bubbles :D

Hehe. I'm down to the last few :( Gave a couple to the kids for their lunchboxes etc.
Unfortunately, the last few are the ones that ended up 'rising' a bit too much and also ended up a bit like biscuits.

Luckily, a quick dunk in a cup of tea, and theyre soggy chewy cookies again :D

Lana's mother makes by far the best cookies I've ever tasted. After these threads on cookies I thought I'd try and nab her recipe and pass it along. She's tried many, many ways of making cookies over the years and whilst they were good never reached brilliance until she tried someone elses at a brownie's event at a local school. She got the recipe off the genius behind those and now passes it on wherever she can :)

At some point this week I'll try and have a try at making these (and Kate's gorgeous looking ones, strictly for scientific comparison naturally) . I've done my best to translate the American 'cups' measurements into proper measurements.

3 1/4 cup (360g) of flour
1tsp Soda (I presume she means bicarbonate of soda)
1 cup (225g) caster sugar
1 egg
1 tsp vanilla
1/4 tsp Salt
1/2 cup (115g) butter
1/2 cup (120ml) Sour Cream

200 degrees for 5 minutes.

Not sure how many that makes, looks like possibly more than Kate's, but the ratios of ingredients are different so *shrug*

Bumpity bump..... I have just made:

1 batch of double milk chocolate chip
1 batch of dark chocolate and cherry (the dried but still squishy ready to eat kind)

These and doughnut muffins have become my main "take round friends" gifts - I did a batch of both for out jingly day last weekend :)

Lana made some of these for me to bring into the office last week as we had to work on Thanksgiving day.

They went down an absolute treat:


APPLE CHIP COOKIES
1/4 c. butter
1 c. brown sugar
1/2 c. cream
1 egg
1/2 tsp. soda
1/2 tsp. salt
1/4 tsp. nutmeg (I used cinnamon instead)
2 c. flour
1 c. pared, chopped apples, chop small (use generous cup)
1/4 c. butterscotch chips (be generous with these too!)
1/2 c. chopped walnuts (Optional)
Cream butter, and sugar, beat in cream, egg, soda, salt, nutmeg and flour. Add apples, chips and nuts. Drop by teaspoonful onto greased cookie sheet. Bake at 350F for 12 to 15 minutes. Do not overbake.
GLAZE FOR APPLE CHIP COOKIES:
3 tbsp. melted butter
1 tsp. cinnamon
2 tbsp. cream
2 c. powdered sugar
Combine and spread over cooled cookies.


Google will help you convert cups into oz / g as you prefer.

Be sure to serve them warm though, no where near as good when they were cold. If they've already gone cold, whack 'em in the microwave for 20-30 seconds and jobs a good'un.

I started off disliking the idea, but the more and more I cook using them, the more I love it. No faffing about, just scoop whatever and go.

yep as long as you get proper measures and not just use a normal teaspoon and remember to give it a shake then level it of with a knife. You can't go wrong and so bloody easy.

Thread revival :D

So ever since I first tried to make these, they've kinda become one of my most requested baked item :p

I'm in the middle of making some at the moment but with a variation - gluten free.

I've discovered that the mix doesn't go as far as it does normally - I was easily hitting 30+ big cookies and I think I'll get 25/26 from this batch. Also you need ice cold hands for the rolling into balls part - it is worse than wallpaper paste! I've taken to leaving my hands a little damp as that helps but you're looking at 6-8 max before they just refuse to leave your skin.

I've just given one to Mic to taste test - gf chocolate is a lot sugarier that normal chocolate so I'm worried they might be too sweet.

I've also done some GF brownies this afternoon (I only cooked normal ones for the first time last weekend :p ) and they're looking good so far - very soft in the middles which I'm hoping leaving them to cool will solve; didn't want to cook them any more as I like the crunchy outside, moist inside style brownies :)


edit: taste test says they are good :)

2nd edit: gf brownies will not "set" enough for me to get them out of the tray :/ tried cooking more but they are remaining super squidgy - will have to play with this recipe more!

If I'm making biscuits from a naturally sticky dough, I like to put the dough in the fridge for 10-15 mins before doing the rolling out :)

I made 70 gingerbread biscuits last Sunday and wouldn't have been able to do anything with the dough without putting it in the fridge first :)
