So it's been a while since I've posted in this here forum, so I thought I'd return with a bang (well not so much a bang as a roasting)...
This evening I have been playing with food. But no ordinary food, much of it is stupidly expensive and fun to play with :D
Here is what I had to cook with...

Now I know what you're thinking...
Firstly, "OMG DYM HAS A CUP WITH SEX WRITTEN ON IT!"
Secondly, "ooOOoo FOOD!"
So where did I go from here?
Well, I grabbed a handy bludgeoning tool (in this case, a wine bottle) and flattened out those chicken breasts thusly:

Then I made with the knife and sliced up some of the spring onions and mushrooms:

After this I had a rest and a beer before creating a strange amalgamation of stuffs on the chopping board...:

Add some Stilton:

Then create a funky chick in blanket roll (or two) :D:

I popped this lot in the oven for a bit (after a light sprinkling of olive oil, then about 20 minutes at 200 degrees see) and received a rather enjoyable outcome:

Served it up with some salad (avec beetroot gratings) and my own special recipe new potatoes (slathered in butter, black pepper and parsley), accompanied by a very nice glass of Frascati :)

All in all a very enjoyable evening meal.

That fridge/freezer is taller than me! And there's another dining table to the left of it :o
The fuds is easy, you'll be able to do it no problem :)
I might have mostly ignored the salad and potatoes while eating though :o

the potatoes look really nice - I have habit of always doing them plain or with mint. New new potato ideas wanted :)

Looks great, I made something very similar the other week/ Slice open the breast and stuff with cheese or anything else you want. seal it then place in oven for 15-20mins. Make a rostie and server with what ever veg and gravy you want simply awesome.
No garlic! :( Then again I put garlic in everything :o

Looks really good, i've been wondering how to do something like this for a while. I was thinking along similar lines but having bbq sauce. Either being cooked in a bbq sauce or done afterwards

Chicken with cheese in the middle and bacon wrapped around is one of Leon's favourite meals. I was actually thinking of making this tonight with the left over feta that I have in the fridge. Might throw in some sun-dried tomatoes for extra nom.
We'll have it with oven roast veg because it's the only veg I can do at the moment due to lack of hob :)
would this work without any cheese? or do you need the cheese to stick it all together?
Or is there something else that would work instead?
It looks very nice though :)

The fat in the bacon fuses together so they retain shape and integrity so any/no cheese would work :)
Thinking about using Camembert next time I do it :D

Such a great ingredient. Especially when combined with sundried peppers in oil.
But expensive :(.
I keep meaning to dry my own. It's dead easy but for some reason I never do it.
I love sun-dried tomatoes and use quite a lot of them. I do find that a little goes a long way though because they're so flavoursome.
Anyway, I did my own version of this the other night. It changes every time I do it, but the bacon/chicken combo remains the same:
I took 2 (free range) chicken breasts that I had in the freezer and removed the mini fillets. I laid out 3 slices of bacon and chopped up some sundried tomatoes.

I put a layer of the toms on the bacon, followed by some slices of brie.

The chicken breast went on top and then I put another couple of slices of brie on that before popping the mini fillet on top and wrapping up in the bacon. I usually secure it all with cocktail sticks because the bacon sometimes comes loose and you lose all your cheese.

Cooked in the oven, top shelf at GM6 for 20 mins and then finished off at GM8 for 5 mins to crisp up the top if needed.

Meanwhile my oven roast veg was cooking away merrily in the middle of the oven. I find it generally takes about 40-45 mins for oven roast veg and I use whatever veg I happen to have in the fridge. I also leave out any tomatoes or mushrooms until the last 15-20 mins to keep them juicy. This was also an opportunity to road test my new roasting tin.

Oh, don't forget to use good quality bacon. The cheapo stuff is full of water, which all comes out when you cook it, so the chicken ends up swimming around in a bath of water. Lovely!

Looks good, but you used normal bacon and not smoked streaky bacon :(
Not streaky, but still smoked :) I do prefer streaky, but never buy it due to fat content. I appreciate that this dish isn't exactly low fat ;) but most of my cooking is, so that's why I buy back.
Looks lovely :) Can't wait to try this when I don't have to cook standing on one leg ;)
