Would confirmation from me do instead ;) Yep, those is them! The secret is to take them out whilst they still look underdone. Oh and don't pat them down. Leave them as balls on the baking tray.

Will put up the lemon cake recipe in a bit. It's out of Nigella - Domestic Goddess, if she has that one?

Glad you liked 'em :)

Found the recipe online. Trés convenient!! :)
Nigella's Lemon-Syrup Loaf Cake

Ingredients

Cake:
125g unsalted butter
175g caster sugar
2 large eggs
Zest of 1 lemon
175g self-raising flour
pinch of salt
4 tablespoons milk

Syrup:
Juice of 1.5 lemons (about 4 tablespoons)
100g of icing sugar

Method

1. Butter and line a 23 x 13 x 7 cm loaf tin and preheat the oven to 180 degrees or gas mark 4.
2. Cream together the butter and sugar until pale and fluffy
3. Add eggs and lemon zest and beat in well
4. Add the sieved flour and salt, folding in gently but thoroughly
5. Mix in the milk
6. Scrape into loaf tin and put cake in oven for 45 mins, or until golden and a cake tester comes out clean
7. While it's cooking, heat the sugar in the lemon juice over a gentle heat until it dissolves.
8. As soon as you take the cake out, puncture holes all over the top with a skewer and pour the syrup over to let it soak in. Make sure there are lots of holes in the top so it doesn't all go down the sides.
9. Wait until it's completely cold to take it out of the tin.
10. Devour

Damn you Kate - Mic loved your cookies so much he made me have a go :/ I don't and can't do sweet foods :/

Some looked like they were soft and chewy but a lot looked like crunchy cookies. Don't know if Mic has tried them yet, the rats like them so thats a good sign ;D (they're fussy)

You've not managed to nom them in 24hours!??!

Can one make these avec an electronic hand whisk?? Will be messy I know, but should still work?

Thank you!

No demarara isn't right. The only prob I'd see with hand whisk is the mixture is so thick it might just not whisk it at all. I know mine wouldn't be able to whisk up the mixture. You'd be better off using elbow grease and a wooden spoon.

I did it! :D

Yeah, we went to Asdas so I could get the right sugar, I actually picked up soft light brown sugar... didn't realise that there were so many sugars!!! :o

The hand whisk wasn't too bad... just had to whisk it in parts instead of all at once to stop the mixture spilling everywhere.

Anyway, in hindsight I shoulda baked 6, then another 6 etc until all the mixture was gone as 10mins isn't too long to wait, but didnt...had had enough by that point... so thats why they didn't keep their shape :p and are different colours and the dark ones are the ones who were on the top shelf.

Nevermind! You learn from experience right? :D Still tasted nommalishusss!!! Rob agrees with me :)

They came out really well :) Mic hasn't made comment yet but I liked them and so did the Horde :)

You don't need the salt at all and I kept in the grated chocolate (more because I was auto pilot that for any other reason) which could be left out to make a "healthier" cookie

*thinks of all the sugar in them and giggles at the idea of a "healthy" cookie*

I was thinking of trying a nutty one but I'm not sure what nuts would be best. I was also looking at the various types of dried fruit in tesco and pondering attempts with a few of those.

(I'm not a cookie addict but I have a few things coming up where "donations to the kitchen" are welcomed and cookies are quicker to do than my normal quiches)

Macadamia nuts always go well in cakes and biscuits, so I'd try them. Chopped pecans would also be nice imo.

I agree on the salt front. I usually plain forget to put it in, but it was on the recipe, so I put it there. I also find that the grated chocolate bar just gives it... something. I bet putting the nuts in but keeping the grated chocolate would taste fab!!

Jamie - you can freeze the dough balls :p Just roll them up, pop them on a tray and freeze them. Once frozen you can transfer to a tupperware container to cook whenever the need arises. They'll just take a couple of mins longer from frozen.

Am going to do mine in batches next time, last time I got a bit excited and lobbed them all in at once, with the ones on top being darker in colour (of course)

Move them further down the oven. Might help.

I usually get around 25 cookies and I roll them up smaller than a golf ball too. They always take 10 mins on GM 6 in the middle of the oven.

I really want to experiment and make lots more cookies buuut.... I just nom them lots so had best refrain!!

I probably get about 20 out of my mix and stick them in on GM 6 for 4-5 minutes! Though I put ours in a non fan oven and on the top! So it's all weirded out at mine! :)

Slightly under did them last time but they were still gorgeous!!

Question for the cookie monsters where when you take your cookies out of the oven are they still crumbly on the bottom?

Pheebs
20-11-2008, 08:43
What do you mean by crumbly? Uncooked? Or crispy crumbly?

My cookies are normally quite floppyish. They really look not cooked at all but by the time I scoop them onto a cooling rack and leave them for 30 mins they've firmed up!

Don't know about crumbly though?!

Pics!!

Jingo
20-11-2008, 10:44
I find that my cookies when first removed from the oven (gas mark 5 for 9 minutes) they are almost like a fairy cake- all smooth and tiny little bubble holes dotted across the surfaces!

then after leaving to cool for 10 minutes they obtain that "cracked" effect over the tops, then after a further 20mins they go into the cookie jar/tin where they remain chewy, delicious and not there for long! ;D

Desmo
20-11-2008, 12:21
Most of mine don't even make it to any form of storage, they're eaten straight from the rack. Oh my, what an image that just popped in to my head.

OK cookie makers....Apple and Cinnamon are good :D

Use dried apple pieces and make sure you cut them down in to really small pieces as they seem to inflate in the oven ;D Think I used about 1-2tsp of cinnamon powder. Not sure really as I just kept pouring it in :D

Take two round pizza base trays as that's all you have...lay them out on baking paper, and cut out the right size to cover the trays.

Get the ingredients together, and arrange them in a convenient placement, ready to photography.

Do not eat the fudge bars.

Or the butter

Or the sugar.

Actually. Just don't eat yet.
