Inspired by Tak and SINC, I've cooked probably the first thing I've ever done from ingrediants (no stir in sauces).

This is how it was done

300G beef mince
1 chopped onion
1 tin of chopped tomatoes
1 small tin of kidney beans
Good few shakes of hot chilli powder
couple of teaspoonfulls of crushed chillis
couple of teaspoonfulls of bisto to thicken.

Not the most advanced thing in the world compared with some here, but we'll see how it turns out!

I've heard that before but my parents never did and I've always nommed theirs. If it's a case of lob that lot in a pan then even I might give it a go. Would also be my first (save things like bread which don't count due to using a breadmaker). :shocked:

Might have to make chilli sometime, never cooked it as I don't like mince but just had quorn mince last night in a bolognaise and liked it so worth a go :D

Here's my recipe ( to serve 6 hungry centre parcers ! )
Olive oil
1 large Onion diced
Mixed herbs
Worcestershire sauce
2 cloves garlic
1KG Mince
4x beef oxo
2x veg oxo
2 tins chopped toms
2 tins kidney beans
3x peppers
2 tbs tom puree
2 tsps chilli powder
2 tsps hot chocolate powder
salt & pepper to season

Cook the diced onion in the olive oil, add the garlic, mixed herbs and worcs sauce
Once cooked add the minced beef and cook until browned
Add the oxo cubes and cook for 2/3 mins
Add the other ingredients and cook for as long as possible !
( we usually cook for about 5 hours in the slow cooker, last week we simmered on the hob for about 3 hours )

Was pretty good!

The texture was great and the temperature was great but it was kinda missing something. Not sure exactly how to describe it though. It wasn't bland but it wasn't quite tasty as I know they can be!

I don't use bisto either, just seems a bit wrong, but it's all a learning process.

Will try with garlic next time :D

I only used Bisto to make it thicken up a bit, wasn't sure how else to do it without chucking in flower :p

It shouldn't need thickening up to be honest Chuckles, I never use anything to thicken mine up :)

you can get "thickening granules" which are a real cheat way of doing it, they don't add any flavour at all. I hardly ever use them, but I find that if I've added too much liquid and don't want to leave it to simmer down for hours I add a few and stir in.

Just leave it to simmer for longer and the water will evaporate, the taste will improve too :)

I use it and have yet to have any complaints. I used 3 veg oxo cubes in the one on holiday. So what if it isn't the most "sophisticated" way to do it?
It is all about personal taste - I have tried chocolate powder a few times before and it contributed sweet FA to the taste to me so I don't use it.

Chuckles - it looked good as a first attempts :)
Try some dried mixed herbs in with the onions when you fry them off and as Piggy was screaming...I mean suggesting ;) try some garlic - even some tubes of puree stuff would be a good place to start and then progress from there.

Don't think that you have to try all the suggestions at once; try adding one thing at a time to see how it affects the taste for you :)

That seems quite defensive to me, and with no need. :confused:
I don't think anyone said that your chilli wasn't good, infact I think I said it was delicious.

It's just a different way of doing it, it doesn't seem right to me to add bisto but doesn't make it wrong generally.

You just need to cook it longer. Chilli should be slow cooked so hour and a half at least. If you can't wait stick the heat up and boil for 30 mins that will reduce it to a sauce.

Indeed.

To me it looks like it's missing Garlic as well as bit of Cumin. Also, don't underestimate the power of Chocolate :)

@ Chuckles. It's also worth remembering that if your used to doing food out of a jar, it's laced with salt and sugar. So when you make your own food, for the first couple of times at least it may taste as though it's missing stuff. Wait till you try some Jar food after you have been cooking your own sauces and you will find it to be over salty, over sweet and completely over seasoned.

Wait till you try some Jar food after you have been cooking your own sauces and you will find it to be over salty, over sweet and completely over seasoned.

It wasn't that, I've had ones that other people have cooked from scratch, and at restaurants etc. Not sure how to describe it really. It kinda had the heat but it was almost that it was lackign in the actual chilli taste a bit.

use good chilli powered and I always use lazy chilli in it as well. Or you could finely chop some fresh chillis.

Oh and as said before cumin and garlic.

I used hot chilli powder, dried mixed herbs, paprika hot, lazy garlic and lazy chillis in the last one but I also have dried mixed chillis, crushed chillis and a couple of varying levels of chilli powder in my cupboard

That's always my advice with chilli as well! Green and Blacks cocoa powder is best I find but I also had good results just chucking in the chocolates that no-one eats - orange and strawberry cremes, etc.

You can use it in lots of other cooking too, especially vegetarian where you're after a deeper, smokier taste. It works really well in vegetarian chilli for example, giving the soya mince some "depth".

Haven't cooked one of my own in a good 6 or 7 weeks now :S

No reason for 2 colours of onion, just had reds and the spare standard one from CP :p

I tend to cook a hell of a lot and then freeze it in single portions after leaving it overnight in the fridge.

What does everyone eat it with?

I just like having a boll with so home made garlic bread to scoop it up with. Butter and garlic in foil for about 30 mins. None of that Herby garlic bread rubbish.

Also got the ingredients to make one with.

You should also get the chilli beans in chilli sauce it adds a depth to it as well.

Or pineapple, another common ingredient.

My chilli is beef, onions, garlic, tinned tomatoes, fresh red and green chillis, dried extra hot red chilli powder and an oxo cube. It'll blow your head off and split your rectum the next day but damn it's good.

Crushed dried chilli (if I have any, my stocks are running low due to house move).

Oxo Stock Cube
Pinch of sugar + salt

An entire garlic bread and some soured cream.

Haven't got any red wine or chocolate. But might get both after the day I had. Got the van stuck and bottomed out in mud. Managers knew nothing so spent the rest of the day scratching there heads and we did nothing worthwhile.. GRRR managers should stay in the office and sort out the kit we need and the logistics. Not come and take over aour jobs when they don't have a friggin' clue.. Agghhhhhh

Bottles of pre extremely finely chopped stuff. Ginger, chilli, garlic, lemongrass. That sort of thing.

When I flat shared, my flatmate used to dry fry the spices before adding the meat. The kitchen was like a CS chamber, we used to stand there coughing and spluttering, eyes streaming. Great!
