View Full Version : Kate's kwality kofta kebabs

I made these on holiday in Cyprus and they went down extremely well with everyone, so I thought I'd post up the recipe here if people wanted to try it out. They're best done on the BBQ by a sexy Frenchman, but I'm sure they'd be just as nice done under the grill or on a griddle pan :)

This recipe will make around 24, which will serve around 8 people.... or 5 VERY fat, greedy pigs :D

Ingredients
1.5kg minced lamb (or beef if you like)
1 large onion, finely chopped
couple of handfuls of coriander, roughly chopped
couple of handfuls of flat leaf parsley, roughly chopped
4-5 cloves of garlic, crushed
handful of feta, crumbled
salt & pepper to taste
splash of olive oil to bind together
any other herbs/spices you wish to add for extra flavour

Method

1. Put all the ingredients into a very large bowl and squidge together with your hands until everything is evenly mixed.

2. Roll the mixture up into short sausage shapes and place on a plate. Leave in the fridge for an hour or so. It just lets them settle and makes them less likely to fall apart during cooking. You can press them around wooden skewers if you wish, but it's a fiddle.

3. If cooking on a BBQ, place the koftas in a burger holder thing (see below). It presses them down a bit for even cooking and makes turning them much easier.

4. Cook until browned on one side, then flip and brown on the other side. I think we cooked ours for about 3-4 mins either side.

5. Heat up some pita breads on the BBQ (ours were freshly made at a local bakery and tasted incredible) and crack open a can of KEO ;)

6. Serve to the waiting ravenous beasts, accompanied with some salad and potato wedges... or whatever you like really :)

7. Sit back and stare in horror as your beautiful, lovingly hand-crafted koftas are recklessly devoured :D

Not really convinved it'd work with quorn in all honesty because it doesn't bind together very well at all. You might need to add a beaten egg or something to try and get it to bind together.

You can also do them with chicken too. :) Turkey's not a common Med ingredient, but it might work. :)

Kate did a fantabulous job I don't think I deserve credit as I just told her what ingredients were needed and how to make 'em, and she improvised - I honestly thought they were better than any of the ones in the restaurants we visited.

Just as a point to note, you don't normally put feta in, but it worked bloody well!

I'm weird :p (which you knew already ;D) Only like quorn mince, proper mince of any sort just makes me a bit :confused: So I'll give it a go with quorn anyhow :D

I luuuuuuuuuuuuurve Kofta (spelt Kofte over here but pronounced the same). I had mixed grill for dinner tonight, which, out here, means steak, chicken and Kofte. Bloody cook only put one piece of Kofte on my plate - he got told not to be silly (I think he was in a bit of a bad mood because he couldn't eat for another half an hour and all us ex-pats were stuffing our faces :p).

Is it the texture before cooking that you have a problem with, because this is just the same mince that goes into burgers and sausages and I know you like them :p I love squishing all the meat and ingredients together with my hands, but I guess it could make some people a bit queasy. Good suggestion from folks suggesting chicken too. Mmm!

It's a bit more complicated than that really. For the most part, I don't like the taste of any meat which is why I guess I'm ok with chicken because it's not strong tasting.
I'm not overly keen on sausages, just abide them if I'm hungry and it's the only option or have ones full of things like chilli and onion etc so there's less meat content or it covers the taste and tastes more of something other than pork sausage. Or I drown them in sauces etc so it's less noticeable for me.
When I have chicken, it tends to be heavily seasoned with herbs for example or covered in a sauce, or in things like lasagne. I don't like things like roast chicken because it's just plain old chicken, so when I have a roast dinner I have everything but the chicken :D Or whatever meat is involved at the time.
So as someone that's not really fussed about meat, mince just isn't my cup of tea :) Partly because of texture, partly just because of what it is.

Told you I'm odd :p But I'm just plain not fussed with meat. If I never ate it again, it wouldn't be the end of the world at all really :D Only really annoying part is how so many people think you're a freak just because you don't like the taste of something.....not aimed at you obviously! Just the many years of 'OMG you don't eat beef? You weirdo!' ;D

Luckily when it comes to non-meat stuff/veg stuff, I'm very unpicky :D

Sorry for the OT into my weirdness!
