Just had this tonight.. Pure awesomeness. Not particularly healthy, Quick easy and pure comfort food.
Serves 4 (about 750 calories) 300grams pasta (I use penne) 225grams Spanish Chorizo 1 large onion 6 or so mushrooms heaped tablespoon of whole grain mustard 250gram tub of low fat Mascarpone 50grams cheddar cook the pasta and set aside. In a pan fry the cubed chorizo of when the oil starts to come out, throw the onions and mushrooms in. When the onion has softened remove from heat and stir in the Mascarpone and mustard. Mix in the pasta and place in a pyrex dish. Grate the cheddar over and bake in the oven for 15-20mins at around 180 until golden brown. Even when your on a diet you need comfort food every now and then and this is brilliant. If you watch the calories during the day 750calories for a main meal isn't a huge amount and it's a good size portion.

Umm mozzerla.. That would work well.
Do you put sundried tomatoes in with the sauce as taht would rule. Sundried tomatoe, chorizo, mozzerella and basil.. In fact I might have to try that in a few weeks.

yeh chorizo and other cured sausages would survive a nuclear war. They will be fine for months..
As for the cheese no it wouldn't realy work as the mascarpone is the sauce.
