Default Banana Pancakes :D

I made these for breakfast this morning

100g self raising flour,
40g wholemeal self raising flour,
2table spoons caster sugar,
1 egg,
6fl oz milk,
1 egg.
2 bananas.


sieve flours into a bowl.
add sugar.

Pour milk into a jug, and crack egg into it. whisk together.
add to flour and sugar, and mix, making sure there are no lumps.

peel and chop bananas, then mash with a fork, and add to batter.
mix it all together.

heat some butter in a pan, and then ladle in the batter to make little pancakes (3 or 4 at a time depending on size of pan.)

cook for 2 mins, or until bubbles appear on surface, and then turn over to cook other side.

makes about 10

I love pancakes muchly and really should have them more often than once a year.

Little tip - leave the batter to sit in the fridge for a few hours and you'll end up with lighter pancakes.

Understandable If you can't wait, then an extra pinch of flour just before you cook will do a similar thing.
