Default Five minute mediterranean chow

Going off on a bit of a med tangent recently and came in tonight with no real impetus to cook much, so I just slung a few things together and made a meat 'n' two veg variant:

Ingredients:
Chunks of chicken breast
Beef tomato
Mozerella
Pesto
Olives
Olive oil
Lime juice
Fresh basil

Cooking:
Heat some olive oil in a pan, and while that's happening, slice some tomato and mozerella and layer on a plate with a handful of olives. Sprinkle chopped basil over the top. Cook the chicken in the pan along with a heaped teaspoon of pesto and the juice of half a lime.

When thoroughly cooked, put on the plate with the rest of the stuff and tip the oil/pesto juice over the cheese and tomato.



I considered heating the mozerella and tomato but frankly I was too hungry to wait! Took almost no time at all, and delicious.
