Default Supersimple stew!

I have been feeling a bit under the weather recently, and what better way to sort that out than with a nice, wholesome stew!

Basically, I got some potato (but not too much, I dont want to make this particularly thick!), swede, leek and baby onions, chopped them up nice and chunky (but left the baby onions whole) and lobbed them in a pan.

Covered them with water and then added two beef stock cubes, black pepper, salt (just a touch!) and a good measure of red wine, then set it to one side...

I literally *just* browned some diced beef in a frying pan (no oil or anything like that) and then put it all (inc liquid) into the pan we prepped earlier.

This was then brought to the boil and is currently sat on a low heat on my stove, bubbling away and smelling delicious

I plan to serve this with some fresh chunky bread

Pics and a taste report will of course follow

Stew is such a wholesome meal and it's so easy to prepare. You just act like a witch, dropping all sorts of ingredients into a huge pot and stirring it now and again.

My favourite stew recipe is a hearty beef stew (summary below) Just double or triple up the quantities depending on how big your appetite is and how many people will be eating it.

500ml of water (adjust to preference on how much broth you like)
1 stewing steak
1 whole onion
1 carrot
1 fatass potato or two mediums
1 leek
1 clove of garlic
Parsley

Cut up steak and brown it
Chop up onion/carrots/potatoes/leek/parsley
Bring water in pan to the boil, chuck in steak and a crushed oxo cube
Add onions, carrots, leek, potatoes and some chopped parsley
Finely chop the garlic and add that too.
Give it a good stir and cook for about 1 hour and a half or more depending on how soft you like the ingredients.

For maximum flavour and tenderness, place the above into a slow-cooker on low for 6-8 hours.
