Leftover veg surprise (V)
The surprise is how good it tastes!
Actually, this is barely even a recipe. I just took what I had left in the fridge (1/4 of a green pepper, a third of a courgette, a handful of mushrooms, a small red onion and some cherry tomatoes) and fried them in olive oil with half a teaspoon of lazy chilis. When done, I drained the Farfalle pasta I'd been cooking and threw it in with a couple of heaped teaspoons of green pesto. I served it with just a sprinkling of pepper as I was too hungry to grate some Parmesan!

Sounds good and simple to me
I like pasta recipes like that, really quick and no need to worry about the fridge contents because you can bung it in anyhow

I eat this kind of thing all the time! I add black and green olives and sundried tomatoes and sometimes serve it on ciabatta instead of pasta.

The one thing I would have liked to have had in addition was black olives. Alas, the cupboard was bare.
