Chilli Bean Bake (V) (Low fat) \o/
Just cooked this and was suprised at how absolutely delicious it was, so I thought I'd post up a recipe. Not only is it one for those bloody vegetable eating hippes , OMG it's ***LOW FAT*** too. Woo!
Serves 2 Ingredients olive oil 1 onion, finely chopped 1 medium red/green chilli, sliced 1 clove of garlic, crushed 1 can mixed beans/pulses in water, drained (can is the same size as a baked beans can) 1 small can of sweetcorn 2 tsp tomato puree 1 tsp mixed herbs big pinch of paprika 1 slice of bread made into breadcrumbs (approx 6 tbsp) 30g low fat cheddar cheese, grated (or just normal if you're allowed it ) 1. Preheat oven to Gas Mark 4 (180ish?) 2. Heat a small amount of oil in a frying pan, add the onion, chilli and garlic and gently cook until softened. 3. Add the beans, sweetcorn, tomato puree, herbs and bring to a boil. 4. Transfer to an ovenproof dish, spoon over the breadcrumbs and top with the grated cheese. 5. Cook for around 30 mins until golden on top. Cover with foil at first if you're worried about it burning... mine didn't in my gas oven, but it tends to cook from the base upwards anyway because it's a bit odd. I took a picture, but it wasn't until I'd tucked in because I wasn't sure how nice it'd be... it looks horrible in the pic, so I'm not showing it in case it discourages people from making it I'm sure it'd be lovely cold for lunch the next day too... but I'm afraid we scoffed the chuffing lot!

Ooh that sounds nice Sounds like a great thing for me to attempt to do one night then take the leftover to work the next day too.
Now all I have to do is make sure I actually try

A couple of slightly less "eurgh" looking pics from t'other night. The cheese looks weird because I grated it with a fine grater so I could use less and spread it uber thin over the top.
