St David's day Welshcakes
Today I decided to make Welshcakes
Ingredients: 225g Self raising flour 110g salted butter 85g caster sugar 1 egg A handful of sultanas Milk if needed Sieve the flour into a bowl, rub in the butter to make a breadcrumb mixture. Add the caster sugar & sultanas and mix. Add the egg And mix to make dough. Add some milk if required (I added a splash as my egg was quite small). Taste mixture! Roll out to 1/2 cm thickness (dust board & rolling pin with flour to stop sticking) Cut out Welshcakes with a cookie cutter. Heat heavy bottomed frying pan (or flat griddle) to medium. Cook for 2-3 mins a side, until browned. Leave to cool on rack MB takes macro shot! Nom!

I love welshcakes although never made them. The local market have some that I absolutely adore and could quite happily live on

Nice sultry Nigella shot there Makes them seem all the more tasty! Nice simple recipe, might have to give them a go, preferbaly if I am going to have people round or I will eat them all myself

I'll have to have a go at these. The only Welshcakes I've had were the one's Piggy's Mum made for the BBQ meet and they were delicious.
