Default Noodle Soup

Nice and simple but tasty noodle soup

4 cups vegetable boullion (I use marigold swiss vegetable boullion)
1/2 Leek finely shredded length ways (keep strips about 2 inches long)
chives cut into 2 inch lengths
1 little gem lettuce shredded
1 portion of rice noodles (can be left whole or cut into 2 inch lengths)
2 teaspoons soy sauce
Either 1 cooked chicken breast finely shredded or 1 portabello mushrom thinly sliced.

Boil some water and pour over the rice noodles and leave to stand (they take about 5 mins). Heat boullion in pan and add leeks, simmer for a few minutes. Add the chives, drained noodles, soy and chicken/mushroom and simmer for another few minutes. Then add the lettuce for the last 2 minutes of cooking. Then serve.

All measurements are approximate, vary them depending on how you like it Today I had the large stalk from a head of broccoli left over so I shredded it very thinly and added it at the same time as the leeks.

Must admit that is why I buy sushi, I feel it might be too much work for one. I have had a bit of a craving of late and have had it 4 times this week already

The tesco veggie one isn't bad. It's about 90p for 4 pieces though. Not exactly cheap but OK if you want a treat. It was the california rolls for me earlier this week. Today it was just the small selection.

mmmmm! that looks yummy. might have to go and cooking some of that, looks like a good work lunch.
i've also always meant to try the veggie sushi at tesco, i will endeavor to pick some up next time we shop

Mmmmm, that looks fantastic. I always make myself soup for work, so I might have to try some of this as it looks like a nice change from tomato based soups.

I absolutely LOVE sushi! Just wondering why the non-veggies are having the vegie sushi? If you just like it then fair enough, but if you're all "bleurgh" about raw fish, they don't actually use it in most shop-bought sushi. It's just cooked prawns, smoked salmon (OK that's raw, but it's also very common) and cooked tuna. I've been meaning to make sushi for ages. I bought a sushi rolling mat a while ago and intended on buying a little bit of sushi apparatus every time I went shopping, but it kinda stopped after that. Will have to get the rest of the stuff and have a go
