Default Need a really good Pizzaiola recipe

What do most takeaways use because I can't replicate it at home. I tried using a recipe from http://cook.dannemann.org.uk/cooking/mains/pizza/ but it's quite a different tasting Pizzaiola to pizza express, dominoes and the like...

Any ideas?

Pizza Express tastes like just garlic and tomato to me.

I'd probably go with a tin of tomatoes and about 4 cloves of garlic. Gently fry the garlic in plenty of olive oil until it's soft. Don't let the pan get too hot or the garlic will burn and go brown which will make it bitter, then add the tomatoes with a generous sprinkle of salt and pepper. Cook it right down until it's dark and thick and you should get what you're looking for

Dominoes is more tomatoey from memory so you can add a few tablespoons of tomato puree as well.

I use a ratio of 1 small can of tomato paste: 1 tbsp olive oil: 2 cloves of garlic: sprinkling of Mediterranean green herbs

I watched a program on 'fake-aways' and it said that this combo was the closest to commercial toppings. I dont know how true this is - but it's certainly a lot tomatoe-ier / tastier than using a passata based topping - i like the sauce strong as we only have cheese on top of it!!

Pizza with a good enough tomato sauce doesn't need much more than a bit of mozarella to be truly great

Hoisin sauce works well as the base, especially if you put some delicious duck on top
As does a bbq style sauce as long as you have plenty of bbq style meat on top

I don't like Hoisin sauce (or, at least, I decided I didn't like it after having it on pizza in Newcastle). Keep trying.

I just use a can of good quality chopped tomatoes, salt, pepper, oregano, garlic, olive oil and a little bit of sugar. Boil it all down gently for ages until it looks like pizza sauce! And as Johhny says add puree if you want it thicker/more tomatoy
