Default Dead easy spicy fish - low fat

Just made this, and it was both lovely and simple so I thought I'd post it. Sorry no pics... it got snaffled as soon as it came out the pan.

Ingredients
2 cod loins (or whatever white fish you want to use)
1tbs olive oil
1tbs lemon juice
1 pinch chilli powder (use more if you like it hawt)
2 pinches ground cumin
2 pinches paprika (I use that sweet Spanish one)

Instructions
Put the oil on to heat in a frying pan.
Mix the spices into the lemon juice and pour into the hot oil.
Add the fish and cook for about 5 mins on a medium flame, turning halfway until the fish flakes easily.

I served it with cous cous, which was seasoned with salt and freshly ground back pepper and then mixed with halved cherry tomatoes, sweetcorn and peas.

Extremely quick and easy meal. Oh and it's low fat too

Why have I not been made a mod on this forum so I can eradicate this talk of heathen dishes!!!!!?????

Only kidding Kate, transpose chicken for the fish and that sounds pretty damn yummy to me

I did fishermans pie last night there's loads left and even that is after giving the boys some (although I had to remove the black peppercorns I'd put in - don't want little ratties munching them :/ )

Mmmm fish. That sounds good. Though I'd defo use more than a pinch of chilli

I only have 2 portions of fish a week - it's soooo good.

Great recipe Kate - I think that might work well with Haddock. Could you grill it instead of frying it?

Fish is not good for me, it causes serial vomiting. I might write a book about it.

But I miss it quite a lot

Yum! The fish fell apart but that was my fault... My nose is running, maybe I won't improvise the chilli powder so much next time.

It'll work with any white fish Will, and I've tried it with Salmon too. If you get the griddle or frying pan really hot, it makes a nice crunchy outside on the salmon. Yumski!

Don't think you could grill it though, because it needs to cook IN the juice and that wouldn't happen with the grill... unless you cut down on the lemon juice and made a paste which you rubbed into the skin.

Glad you liked it Belmit

What about if you tin foiled it? It would then retain all the juices, and part bake and part grill it?
