Default Mediterranean fish

Tried this today and it's SOOO simple and lovely. I served it with a very simple rocket/watercress/spinach salad, balsamic vinegar and olive oil vinigarette... and shavings of parmesan. You could do it with new potatoes or anything really though.

Mediterranean fish
Serves 2



Ingredients
- 2 fillets of white fish (I used haddock and cut my fillets in half so I could get the tomatoes/olives in around them)
- About 10 cherry tomatoes halved. (Spend a little extra and buy the ones that come on the vine. They are SO much nicer.)
- About 20 black olives, stoned and halved.
- A couple of tbsp of pine nuts
- Olive oil
- Basil leaves

Cooking Instructions[list][*]Preheat the oven to Gas Mark 6, take a big baking tray and heat up a slosh of olive oil[*]When the oil is hot, put in the fish skin side down and cook for 2-3 mins until the skin is crispy. Try not to fiddle with it and move it about.
[*]Tip the tomatoes, pine nuts and olive into the tray, season and pop in the oven.
[*]Bake for around 15 mins until the fish is white and flakey.[*]Sprinkle over the basil leaves, drizzle with a little olive oil and serve.

Looks and sounds yummy. I agree about the vine tomatoes - they taste soooo much better than the other ones.

Not a huge fan of olives (love olive oil but not olives ) but I could substitute something else for those.
