During assimilation the nanomachines would control the new drone's behaviour, obviously including any urge to shape shift. Depends how quick they can change shape, assimilation is a pretty quick process, the Borg usually go for the jugular (literally) when injecting billions of those nanomachines.

Probably immune in that case. Add them to the list of species the Borg can't assimilate, such as Species 8472.
