Oh no it definitely works. I often substitute bacon for chorizo when I'm making a creamy (though I use low fat natural yog) pasta sauce. Chorizo just flavours everything so beautifully. Love it!

now i want a carbonara... not made one in ages... going to be on tomorrows shopping list i think
oh and the whole egg/cream thing.... i use both with plenty of cheese as well!
