Isn't it something to do with the top cooking faster than the middle, so when the middle cooks and expands, it has to move somewhere and up is the only way!

Yes BBx, mine had a gash (sigh
 ) Shminkypinkytinky has it right  Lemon drizzle cake will be on the menu for my final day at work in a few weeks because it always completely vanishes
