I'm making choc chip muffins tomorrow and these always come out lovely.
200g plain flour 50g cocoa powder (I go by what it looks like rather than measure) 1-2 tablespoons baking powder pinch salt 115gm caster sugar 75g choc chips 2 eggs 100ml veg or sunflower oil 225ml milk vanilla essence to your taste Sift the flour, baking power, cocoa powder and salt in a bowl and stir Add sugar and choc chips and stir Make a well in the centre In another bowl beat eggs with oil until foamy Beat in the milk and vanilla essence Pour the mixture into the well of dried ingredients and stir until just combined, it should still be lumpy Fill cases 3/4 full and bake for 20-25 mins at 190 fan oven. For cherry muffins substitute the cocoa for plain flour and use cherries cut in half instead of the choc chips. |
