Default Stupidly simple Chicken Korma


This curry recipe is partially courtesy of Jamie Oliver but I love it And it's really adaptable as you can add whatever to it really. As an example the photo above is simmering as I type this. It's got chopped mushrooms, cauliflower, broccoli and carrots as well as the usual ingredients.

You can make your own paste but admittedly I haven't done so yet (the very fact I can cook a full, 'proper' meal is quite a step for me as it is compared to last year!) but may do in the future. However as it stands, it's stupidly simple to do which rocks if you ask me
Also I think it's tastier than any takeaway I've ever had so it's great for an inexpensive treat.

Ingredients:
800g of chicken - I use breast meat and cut it up into bitesized pieces but it's up to you what you want to use. I assume other meat or prawns would work too.
2 medium sized onions - cut into slices to taste
1 x 400g tin of chickpeas
1 x 290g jar of Patak's Korma Curry Paste
1 x 400 ml tin of coconut milk
handful of flaked almonds
Chilli Powder - you can use a real chilli but I stick to powder as it's cheaper and always in the cupboard.
2 heaped tablespoons of dessicated coconut (not essential but it is nice)

Stick the chicken in a saucepan on a high heat with some vegetable oil. Brown the chicken for a few minutes then stir the onions in as well as the chilli powder/chilli. Keep stirring for a few minutes then add the curry paste, coconut milk, flaked almonds, drained chickpeas and dessicated coconut. Then half fill the empty coconut milk tin with water and add to the pan. Give it a stir again. Bring to the boil, then turn the heat down and simmer for about 30 minutes. Eat and enjoy


Above photo includes bombay potatoes too which are lovely
