I tend to try and do as much in the oven as I can so as to reduce work on the day and washing up. I normally roast carrots, parsnips and sprouts in the same pan, putting the sprouts in for about 20 mins at the end. Squash and sweet potato if I feel like it, but I prefer to keep things simple.
