Default Potato cakes

So everytime i make mashed potato i purposely make too much in the hope that the next day i'll be able to make the damn things. So far its not really worked sucessfully once. So what am i doing wrong?

Generally they just don't brown properly, and stay far to mushy. They taste alright, but i'm only really heating up mash with some butter in a frying pan right now

I've tried adding flour and then they make excellent patties and look amazing but still don't keep shape and can't really be flipped. I was thinking of maybe binding an egg in with them next time thinking that will help them set? I could egg wash and flour i guess as well but thats messy work and washing; these are meant to be simple!

Tips?

Todays were actually corned beef hash (with mashed in carrot's) cakes and they tasted awesome, but still after knowingly burning one side in the hope they'd take some form of shape they still wouldn't sodding flip!
