Easy Peasy Enchaladas !

I posted this in the "What you eating thread" but decided it needs its on thread as its soooo nice.

Start my making some fajita's and then laying them in a deep over proof dish. (your normal fajita onions, peppers, marinated chicken, jalapeños, wrapped up in tortillas)

Get a saucepan and sweat off an onion and 4 cloves of garlic in some olive oil, pour in a tin of chopped tomatoes and a squeeze of puree, let it thicken and then add a good slug of Reggae Reggae Love Apple Sauce (this is the key!)

Pour a tub of sour cream over your fajitas in the dish, add some guacamole in dollops over the top and then pour your tomato sauce over the top, grate as much cheese as you like over the top of that and then bake on 180 for half an hour or until the cheese is melted and bubbling.

I cannot stress how lovely this is !

It makes a nice change to just having fajitas and tastes very authentic
