Cooking with purple potatoes

I picked up some purple spuds in Sainsburys expecting them to be the heritage ones I get that taste fab. Imagine my surprise when I peeled one to find it was purple inside! Picked up the wrong ones

Eggs, bacon, black pudding and purple hash browns for breakfast on Saturday

Roast chicken, vegetables, real gravy and purple roasties on Sunday night

Fray Bentos pie, veg and purple boiled potatoes tonight

And don't they turn the water a fantastic brilliant green!
