Default Very healthy/easy soup (Vegan too, get moi!!)

Tomato and Lentil Soup
Much nicer than it sounds to all you anti pulse heathens out there

Calories: Virtually NONE. Seriously, this stuff is dietary heaven in a bowl.
Servings of Veg: Tomatoes, Onions, Carrots... THREE!!
Makes: Bloody loads.. about 1.5 litres of the stuff. It lasts me a week if I take it into work for lunch Mon-Fri.

Ingredients
120g Chopped Onion
1 fat ass clove of garlic (or 2 skinny ass cloves)
180g Chopped Carrot
Can of chopped toms
120g Red lentils (the dried ones)
One big pinch of Dried Oregano
One big pinch of Dried Basil
Tiny bit of oil for cooking
1 pint of vegetable stock (I use that Boulion stuff)
Dash (or three) of Worcestershire sauce (but not if you're a Veggie!!)
Salt & Pepper (freshly ground of course!)



Instructions
In a large saucepan, add the oil, onions and garlic and soften a little. Then add the carrots and cook for about 10 mins on a very low heat until soft.

Next, add the rest of the ingredients (toms, stock, lentils, herbs, Worcs sauce, S&P) to the pan, give it a big old stir and bring to the boil.



Simmer gently for around 25 mins until the lentils are big and soft.

I tried to show the difference in lentils in this pic, but all I got was a face full of steam!


Remove from the heat, tip into a blender and blend until souplike. You can make it as smooth or chunky as you like. Have a taste and add more S&P/Worcs Sauce to taste if needed. You might also want to add a smidge of boiling water depending on how thick you like your soup.



FINITO!

See, told you it was easy. I'd show you a pic of it in a bowl, creatively garnished with a sprig of parsley, but it's gone in a tupperware tub in the fridge for my lunch tomorrow (& the rest in the freezer for next week).

I'd take the 'V' word out of your title or you may have the dirty hippies turning up at your window with their noses pressed up against the glass.

Lol worcester sauce isn't vegetarian

Good effort on the soup though, I might make some this weekend for lunch

You can get vegetarian worcester sauce without the anchovies.

This looks really nice, I've got some red lentils in the cupboard that have been forgotten about so all I need to get is some carrots, so next week it will be on the menu.

The Worcs sauce isn't actually in the recipe. I just put it in because I thought it'd taste nice. I'll correct my post

Well, i'm making this right now (at the simmering stage). Had to use red onions and "itailian mixed herbs" as that was what we had but it smells awesomely yummy. Will let you know how i get on.
