They go slimy when you wash them. My housemate used to do it. There was disbelief on both sides:
"What are you doing washing the mushrooms?! " "You mean you don't wash mushrooms?! "

Home made lasagne with bacon, salad and chips or rice. Yum!
As for washing mushrooms, I only ever give them a quick rinse in a sieve before cooking them in the frying pan in butter and steak juices (usually to go with a decent fillet steak). Now, what's for dinner? Last edited by Zico; 20-10-2008 at 21:06. |

Lasagne looks bloody lovely, makes the one I posted pale in comparison (although I never had the time to make the beschemel sauce). Never added Nutmeg before, though I do love it, and I can't stand Parmesan cheese, so other than that, lovely stuff.
Yep, a lot of people don't know this. It's a good tip. |

I sometimes peel mushroom skins when they're a bit old looking or super grubby
Other than that I will pick off any big bits of dirt and leave it! Adds character and all that Nice lasagne recipe there missy! I have to admit I tend to cheat with lasagne and buy the bottled stuff. Always tastes a million gazillion times better the next day it does Bit like currys! |

Yep you should never wash mushrooms. Always brush them.
I just give em a shake usually, get the most of it off that way. That recipe looks lovely. Gonna have to give that a try. I normally use cornflour, milk and cheese to make my white sauce, but I never use butter.. (And Ive never made it with red wine either) I shall be cooking this sometime this week |
