Really? And be able to update it etc? and be compatible and work well? Then again if I really wanted a Mac I could easily get a MacMini - though I'd miss the raw power I think....

As long as the hardware you use is fairly close to what you'd find in a Mac, then the Hackintosh option is open. This isn't hard to achieve as Apple use just as many standard components as everyone else.
