For crepe style pancakes (makes enough for 2 people)
2oz plain flour pinch of salt 1 egg 3.5fl oz milk mixed with 1.5fl oz water 1oz butter Put flour and salt into bowl. Make a well and break in egg. Stir in the flour from the sides and make a paste (do this gradually with a fork and beat when all the flour is in and you won't have any lumps). Then slowly whisk in the milk & water. Melt the butter in the pan and take a couple of teaspoons of it and put it into the batter and stir it in. Pour all the excess butter into a bowl so the bottom of the pan is just coated with butter. Ladel the batter into the pan and swirl it so the bottom of the pan is coated. When just turning golden on the underside flip it over. When cooked transfer to a plate with a tea towl on it and fold the tea towel over so the pancake is kept nice and warm. Add a little more butter to the pan with kitchen paper and make the next pancake. Repeat. |
