That looks fab!

Any idea what the old el paso mexican mix contains? I tend to try and create my own spice/sauce mixes... if it's complicated don't worry

I haven't made enchiladas for a long time, in fact not had them since I was in Mexico 2 and half years ago!!! Though I did have Burritos in Cali last year...
