Got a chicken roasting in the oven. It will be served with proper gravy, greens, carrots & new potatoes. It's to cure the depression that's set in over the realisation that we've got to go back to work tomorrow, booooo!

Still trying to get my head round oily fish. Like white fish and tuna. But not the oily fish. Determined to convince myself I like salmon.
And this was certainly yummi. Brown rice with red onion and pepper, Steamed broccoli (including the best part, the stalk) and teriyaki marinaded salmon.

Mmmm, that looks lovely! I love oily fish. Was going to do chorizo & chickpea bake tonight, but need to go to Morissons for some salad and think I'm going to do us salmon stuffed with anchovies & sun-dried tomatoes instead as I'm suddenly in the mood for salmon

Tonight I made a huge dish of chicken in white wine sauce and a casserole full of cabonnade of beef. None of it being eaten though! It's all been split into portions and put into freezer bags in preparation for once I am out of hospital and back home. I feel I won't be much up for cooking for a while after that and I want to have proper food and not rubbish or take aways.

One of my new favourite healthy meals is flaked smoked mackeral and brown rice with cherry tomatoes and avacado. Simplest thing I can make but delicious.

Mubs - don't blame you for making some food up for yourself. When we had our kitchen done, we knew we'd be without anything but a microwave for a few weeks, so I made up a load of chilli & spag bol and froze it. Much more satisfying (& better for you) than ready meals or takeaway.
