Looks really good, i've been wondering how to do something like this for a while. I was thinking along similar lines but having bbq sauce. Either being cooked in a bbq sauce or done afterwards

Chicken with cheese in the middle and bacon wrapped around is one of Leon's favourite meals. I was actually thinking of making this tonight with the left over feta that I have in the fridge. Might throw in some sun-dried tomatoes for extra nom.

We'll have it with oven roast veg because it's the only veg I can do at the moment due to lack of hob

would this work without any cheese? or do you need the cheese to stick it all together?

Or is there something else that would work instead?

The fat in the bacon fuses together so they retain shape and integrity so any/no cheese would work

Thinking about using Camembert next time I do it

Such a great ingredient. Especially when combined with sundried peppers in oil.

I love sun-dried tomatoes and use quite a lot of them. I do find that a little goes a long way though because they're so flavoursome.

Anyway, I did my own version of this the other night. It changes every time I do it, but the bacon/chicken combo remains the same:

I took 2 (free range) chicken breasts that I had in the freezer and removed the mini fillets. I laid out 3 slices of bacon and chopped up some sundried tomatoes.



I put a layer of the toms on the bacon, followed by some slices of brie.



The chicken breast went on top and then I put another couple of slices of brie on that before popping the mini fillet on top and wrapping up in the bacon. I usually secure it all with cocktail sticks because the bacon sometimes comes loose and you lose all your cheese.



Cooked in the oven, top shelf at GM6 for 20 mins and then finished off at GM8 for 5 mins to crisp up the top if needed.



Meanwhile my oven roast veg was cooking away merrily in the middle of the oven. I find it generally takes about 40-45 mins for oven roast veg and I use whatever veg I happen to have in the fridge. I also leave out any tomatoes or mushrooms until the last 15-20 mins to keep them juicy. This was also an opportunity to road test my new roasting tin.
